Aero Cookie Recipe!

Hello lovelies,

I don’t know if you’ll agree with this but I feel like chocolate aero’s are like marmite, you either absolutely love it or absolutely loathe it. I don’t feel like there’s an in between.

Me personally, I absolutely love them! They are little pieces of heaven and I won’t hear otherwise.

I just absolutely love the fresh minty flavour which compliments the milk chocolate so beautifully. This utterly perfect flavour combination is what inspired today’s recipe.

I’ve made, baked and shared mint choc chip brownies before which were a hit with you guys so I knew you mint chocolate lovers out there would LOVE this combination in a cookie and that’s exactly what I’m sharing with you today.

Chewy, fresh, minty and utterly delicious – I don’t think I need to convince you anymore, let’s get on with it.

Ingredients You Need:

  • 125g Of Unsalted Butter
  • 100g Of Light Brown Sugar
  • 75g Of White Granulated Sugar
  • 1 Large Egg
  • 1tsp Of Vanilla Bean Paste / Extract
  • 250g Of Plain Flour
  • 35g Of Cocoa Powder
  • 1.5tsp Of Baking Powder
  • 1/2tsp Of Bicarbonate Of Soda
  • 200g Of Milk Chocolate Chips
  • 300g Of Mint Aero Bubbles

How To Make The Aero Cookies:

  • Firstly, gather together your equipment and ingredients and line 2 baking trays with parchment paper.
  • Secondly, using a mixer, beat together the 125g of unsalted butter with the 100g of light brown sugar and 75g of white granulated sugar until creamy.
  • Next, beat in the 1 large egg and 2tsp of vanilla extract until combined.
  • Now, add in the 250g of plain flour, 35g of cocoa powder, 1.5tsp of baking powder and 1/2tsp of bicarbonate of soda and beat until a cookie dough forms.
  • Add in the 200g of milk chocolate chips and 300g of mint aero bubbles and mix until distributed well throughout the dough.
  • Weigh the cookie dough out into 12 cookies, roughly weighing around 96g per cookie.
  • Once rolled, place the cookie dough balls into the fridge and chill for 1 hour (alternatively you could place into the freezer for 30 minutes).
  • Whilst the cookie dough is chilling, preheat the oven to 200C / 180C Fan / Gas Mark 5.
  • After 1 hour, remove the cookie dough balls from the fridge and place 6 balls per baking tray.
  • Place into the oven and bake for 12-14 minutes.
  • Finally, once baked, remove from the oven and allow to cool on the baking trays for 10 minutes before transferring onto a wire rack to cool completely. Then, serve!

That’s your Aero Cookies prepared, chilled, baked and cooled, ready for you to enjoy!


Notes:

  • Store the cookies in an airtight container at room temperature for up to 4-5 days.
  • You can freeze the raw cookie dough and bake from frozen if you didn’t want to bake the entire batch.
  • If you wanted to make these cookies taste even minter, add 1tsp of peppermint extract to the cookie dough.

Another flavour combination I’m totally obsessed with! Chocolate and mint really do complement one another beautifully.

Using mint can be very risky as you use too much, you instantly feel like you’re eating toothpaste which is a big no no! So, i love that the mint in these cookies doesn’t overpower the chocolate. These are a must try.

    Luckily, one of the few British chocolate bars I can easily get where I live (at my local grocery store, no online ordering needed) is mint Aero—plus it’s one of my favourites! This cookie sounds absolutely amazing.
