If you’ve been around here a while, you’ll know that I’m always harping on about my nightly scroll and how much I enjoy it.
It’s the one time of day where I can completely shut my mind off to the rest of the world, relax and really zone in to doing something that makes me truly happy – looking at bakeries and other bakers pages for inspiration on bakes I can recreate.
One page that has me coming back time and time again, is a lovely bakery on instagram called ‘Finch Bakery’. Ran by incredibly talented twin sisters and their team, Finch Bakery never ever fails to have me falling head over heels in love with their bakes.
Unfortunately they don’t have a bakery near to me down in Brighton so I haven’t ever tried any of their bakes personally. However, I only need to look at pictures to know they are without a doubt blooming delicious, which is why they always manage to draw me in.
Going back a couple of months, Finch Bakery shared this picture of their ‘Funfetti Slutty Brownies’ which instantly caught my attention.

{for those of you wondering what a Slutty Brownie is: it has a cookie dough layer for the base which is topped with a layer of oreo’s and finished with a layer of brownie. However this is a Funfetti Slutty Brownie which means I’ve added a layer of white chocolate mixed with funfetti sprinkles into the centre also}
Not only did it look delicious, but for a girlie with a perfectionist mindset when it comes to baking, it was cut into satisfyingly perfect slices with the most incredible, defined layers and I knew from that moment, if I couldn’t go and buy it then I had to recreate my own version.
Boy, am I glad I made that decision as it’s what I can only imagine being transported to heaven to be like.
It’s complete and utter perfection.
And I’ve got to say, it’s much simpler to make than you’d think. Take it from someone who use to look at bakes like this and never believe I’d be able to make it, I’d completely shy away of ever even attempting to try to recreate and now look, I’m very pleased to say that i took the plunge, I blooming made it and I promise you can too!

Chill Time: A Minimum Of 4 Hours Or Preferably Overnight

Ingredients You Need For The Cookie Dough Base:
- 120g Of Unsalted Butter
- 150g Of Light Brown Sugar
- 25ml Of Milk
- 2tsp Of Vanilla Bean Paste / Extract
- 185g Of Plain Flour
- 150g Of Milk Chocolate, Chopped Into Small Pieces
Ingredients You Need For The Funfetti Layer:
- 200g Of White Chocolate Spread
- 100g Of Rainbow Sprinkles
Ingredients You Need For The Oreo Layer:
- 1x Packet Of Chocolate Oreos
- 1x Packet Of Golden Oreos
Ingredients You Need For The Chocolate Brownie Topping:
- 200g Of 70% Cocoa Dark Chocolate
- 200g Of Unsalted Butter
- 4 Large Eggs
- 275g Of Caster Sugar
- 100g Of Plain Flour
- 50g Of Cocoa Powder
How To Make The Funfetti Layer:
- Firstly, the night before making the slutty brownies, line a 9” loose-bottomed square baking tin with parchment paper.
- Secondly, add the 200g of white chocolate spread and 100g of rainbow sprinkles into a small bowl and mix together.
- Pour the white chocolate spread and rainbow sprinkle mixture into the lined baking tin and using a spatula, spread out evenly to all four corners.
- Place into the freezer to freeze for at least 12 hours.
How To Make The Cookie Dough Base:
- The next day, gather together your equipment and ingredients, line another 9” loose-bottomed, square baking tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
- To make the cookie dough base, in a large bowl, beat together the 120g of unsalted butter with 150g of light brown sugar until light and fluffy.
- Next, beat in the 25ml of milk and 2tsp of vanilla bean paste until well combined.
- Now, add the 185g of plain flour and beat again until a cookie dough forms.
- Fold in the 150g of chopped milk chocolate until evenly distributed throughout the dough.
- Press the cookie dough into the base of the 9” prepared tin, using your hands or a spatula to create an even layer.
- Place into the freezer for 20 minutes.
How To Make The Brownie Layer:
- Whilst the cookie dough is in the freezer, it’s time to make the brownie layer.
- In a microwavable bowl, add both the 200g of dark chocolate and 200g of unsalted butter. Place the bowl into the microwave and in 20 second blasts, blast the butter/chocolate until fully melted.
- When both the ingredients have melted, remove from the microwave and place to one side to cool to room temperature.
- Now, in a large bowl, using an electric whisk, whisk together the 4 large eggs with the 275g of caster sugar for around 8 minutes, until the colour has turned pale, the mixture is mousse like and the volume has doubled in size (TIP: you will know it’s done when you lift the whisk up out from the mixture and it should leave a trail for a couple of seconds, before disappearing).
- Once whisked, pour the cooled melted chocolate/butter mixture over the sugar/eggs mixture and very carefully fold together (TIP: being careful and patient is crucial at this stage because you don’t want to knock the air out of the mixture).
- When combined, sift in the 100g of plain flour and 50g of cocoa powder and carefully fold into the mixture.
How To Assemble:
- To assemble, remove the frozen funfetti layer from the freezer then, carefully remove from the tin and place the frozen spread on top of the cookie dough.
- Now, cover the top of the entire frozen spread with a layer of Oreos (alternatively adding one chocolate then one golden).
- Pour the brownie batter across the top of the Oreo layer and carefully spread out to all four corners.
- Place into the oven and bake for 45-55 minutes, until the brownie layer no longer wobbles (or very slightly) in the centre when you shake the tin.
- Once baked, remove from the oven and allow to cool completely in the tin before transferring (whilst still in the tin) into the fridge to chill overnight.
- Finally, after being chilled, carefully remove from the baking tin, cut into slices and serve!
That’s your Funfetti Slutty Brownie prepared, baked, cooled, chilled and cut, ready for you to enjoy!
Notes:
- Store in an airtight container at room temperature for up to 5 days.
- These slutty brownies can be frozen for up to 3 months. I’d recommend wrapping each slice individually in clingfilm. Thaw in the fridge overnight before eating.

Now, you may be sitting here after reading that recipe questioning as to wether you need all these layers but believe me when I say, if you make these funfetti slutty brownies yourself, when you take a bite of all the layers together in the finished bake, you quickly come to realise that all the layers are very much needed as they work so beautifully together.
This really is just pure genius – I don’t think I need to say much more. Huge shoutout to Finch Bakery for inspiring today’s bake!
