Cherry Bakewell Cookie Bars Recipe!

Hello lovelies,

If you’ve been around here a while, you know one of my all time favourite baking bloggers is the amazing Jane’s Patisserie. She’s the one who inspired me to go fully food based here on my blog.

Jane brought out a cookbook during the summer last year and you best believe I snatched myself a copy during the pre-order! I haven’t been as excited for a cookbook the way I was for this one, for a hot minute. Jane’s bakes never fail to have me salivating and I know it’s the same for a lot of you guys.

One of the main bakes which caught my eye in Jane’s book was the bake I’m sharing with you today. In no way, shape or form can I take credit for todays recipe though, this is the work of the baking queen!

Now, if you know me personally, you’ll know my favourite sweet treat of all time is a Cherry Bakewell. I am OBSESSED! Need I say more. So when I saw this recipe in Jane’s book, you just know I had to make it asap.

Let’s just say, don’t go wasting time thinking about this. Get your apron on, your electric whisk plugged in and get your bake on. I can promise you, you won’t regret making these. They are heavenly.

{ FYI: I have added a ingredient / step and changed a couple of the ingredient measurements to Jane’s original recipe }

Prep Time: 10 Minutes

Cook Time: 25 Minutes

Decorating Time: 10 Minutes

Overall Time: 45 Minutes


Ingredients You Need:

  • 225g Of Plain Flour
  • 50g Of Ground Almonds
  • 1tsp Of Bicarbonate Of Soda
  • 115g Of Unsalted Butter, Melted
  • 55g Of White Granulated Sugar
  • 135g Of Light Brown Sugar
  • 1 Egg
  • 1tsp Of Vanilla Extract
  • 2tsp Of Almond Extract
  • 200g Of White Chocolate Chips
  • 200g Of Glacé Cherries, Chopped

Ingredients You Need To Decorate:

  • 50g Of White Chocolate

How To Make Cookie Bars:

  • Firstly, gather together your equipment and ingredients, line a pyrex dish with parchment paper and preheat the oven to 190C / 170C fan /
  • Secondly, in a bowl, whisk together the 225g of plain flour, 50g of ground almonds and 1tsp of bicarbonate of soda, set aside.
  • Next, in a large bowl, whisk together the 115g of melted butter with the 55g of white granulated sugar and 135g of light brown sugar for a couple of minutes until the sugars have started to dissolve and the mixture looks smooth.
  • Once smooth, add in the 1 egg, 1tsp of vanilla extract and 2tsp of almond extract and whisk again until smooth.
  • Add in the 200g of white chocolate chips and 200g of chopped glacé cherries and mix.
  • Now, add the dry ingredients into the wet ingredients and using a spatula mix until a thick cookie dough is formed.
  • When the cookie dough has come together, press the mixture into your pre-lined pyrex dish until evenly distributed.
  • Place the dish into the oven and allow to cook for 22-25 minutes.
  • Once baked, take out the oven and allow to cool in the tin.
  • Finally, once baked, cut into 12 pieces.

How To Decorate:

  • Once the cookie bars have cooled completely and been cut into pieces, it’s time to decorate.
  • In a microwavable bowl, place 50g of white chocolate and microwave in 30 second blasts until the chocolate has completely melted.
  • Now, pour in your white chocolate into a piping bag.
  • Snip the end of the piping bag off and drizzle the white chocolate across the sides of the cookie bars.

That’s your Cherry Bakewell Cookie Bars prepared, baked, decorated and ready for you to enjoy!

How damn good do these look? I’m absolutely obsessed and I think you will be too!

Jane really does know how to make a good cookie bar and this one is no exception. She really is the queen of baking and I’ll forever be inspired by her work.

    Another great sweet treat Elle! I wish I live in your household.😋 These Cherry cookie bars looks deliciously moist. One can never go wrong with cherry and white chocolate. I have a huge sweet tooth, so I am hesitant to try your recipes; your desserts wouldn’t last very long. However, I have saved a few to try some day.

    I eat cherry bakewells daily. I think of them as something my nan always gave me. So these bakes look really good and I know they will be flavoursome.
