After Eight Brownies Recipe!

Hello lovelies,

Every Christmas we fill our coffee table in the front room to the brim with our favourite Christmas sweet treats / snacks (chocolate, crisps, nuts and everything in between).

And one chocolate that we only treat ourselves too at Christmas but is always guaranteed to be the first thing demolished on our treats table on Christmas Day is a box or two of After Eights.

Despite it being a favourite chocolate in this household, I’ve only ever created and shared one other Christmas treat using them before which I can only apologies for as that should be a criminal offence.

Therefore, I knew this year I wanted to change that and create a truly scrumptious sweet treat / desert that can be enjoyed by all, making sure that the After Eights took centre stage and after a lot of thinking, today’s After Eight Brownie recipe was born.

What better to pair them with than a brownie? Chocolate upon chocolate, who doesn’t love that? I knew it would be a match made in heaven and damn, was I right. These After Eights brownies are top tier and a ‘must bake’ this Christmas.

Ingredients You Need For The Brownies:

  • 200g Of 70% Cocoa Dark Chocolate
  • 200g Of Unsalted Butter
  • 3 Large Eggs
  • 275g Of Caster Sugar
  • 100g Of Plain Flour
  • 50g Of Cocoa Powder
  • 1x Box Of After Eights, Chilled

Ingredients You Need To Decorate:

  • 30g Of White Chocolate, Melted
  • 1tsp Of Green Food Colouring

How To Make The Brownies:

  • Firstly, gather together your equipment and ingredients, line a 8” brownie tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a microwavable bowl, add both the 200g of dark chocolate and 200g of unsalted butter. Place the bowl into the microwave and in 20 second blasts, blast the butter/chocolate until fully melted.
  • When both the ingredients have melted, remove from the microwave and place to one side to cool to room temperature.
  • Now, in a large bowl, using an electric whisk, whisk together the 3 large eggs with the 275g of caster sugar for around 8 minutes, until the colour has turned pale, the mixture is mousse like and the volume has doubled in size (TIP: you will know it’s done when you lift the whisk up out from the mixture and it should leave a trail for a couple of seconds, before disappearing).
  • Once whisked, pour the melted and cooled chocolate/butter mixture over the eggs and very carefully fold together (TIP: being careful and patient is crucial at this stage because you don’t want to knock the air out of the mixture).
  • When combined, sift in the 100g of plain flour and 50g of cocoa powder and carefully fold into the mixture.
  • Pour half the brownie batter into the base of the prepared tin and smooth out.
  • Set 9 pieces of After Eights aside for decoration, then with the remaining box, add a layer of After Eights on top of the brownie mix.
  • Pour the remaining half of the brownie mixture on top of the After Eights layer and smooth out.
  • Place the brownie into the oven and bake for 25-30 minutes, until there’s a slight wobble in the centre of the brownie and a skewer placed into the outer corner of the brownies comes out mostly clean.
  • Once baked, remove the brownies from the oven and allow to cool right down to room temperature before transferring into the fridge to chill for a minimum of 4 hours.

How To Decorate The Brownies:

  • After chilling, carefully remove the brownies from the tin and cut into 9 squares (these are quite large pieces, if you’d prefer cut into 16 squares).
  • Add the 30g of white chocolate into a microwavable bowl, place into the microwave and in 10 second blasts, blast the chocolate until fully melted.
  • Once melted, add 1tsp of green food colouring and stir until the chocolate has completely turned green.
  • Transfer the green coloured chocolate into a piping bag, snip the very tip of the bag off and drizzle the chocolate over the 9 brownie squares. When finished, top each slice with an After Eights chocolate and place into the fridge for 10 minutes.
  • Finally, remove from the fridge and serve.

That’s your After Eight Brownies prepared, baked, chilled and decorated, ready for you to enjoy!


Notes:

  • Keep these brownies stored in an airtight container, in the refrigerator for up to 1 week (I would recommend storing the brownies in the fridge so you get a fudgey texture).

It’s a really simple recipe but boy, does it have flavour. The After Eights in the centre work beautifully with the fudgy brownie to create something quite magical and perfect to share with loved ones during the festive period.
