It’s the midst of summer, the temperature in the UK continues to rise significantly and I know so many of you won’t want to be in the kitchen with the cooker on baking all day.
Therefore, I wanted to share with you a super quick and easy, no-bake (just using a hob) recipe that is super delicious and won’t have you slowly but surely melting away in the kitchen.
If you hadn’t guessed by the title, today I’m sharing with you a peanut butter rocky road recipe inspired by the incredible talented Chloe, known online as ‘biteofthebakes’.

If you’ve been here a while, you’ll know that I’ve mentioned a fair few times now about how my Nan is my rocky roads biggest fan. Every Birthday, Mother’s Day, Easter and all the occasions in between, I’ll gift her a box of rocky road and she’ll be thrilled.
When I saw Chloe’s peanut butter version online recently, I knew I had to recreate it for my Nan and between my Nan and my loved ones who got to try a slice – it went down a treat!
Peanut butter is such a powerful, unique taste but it works so beautifully alongside the ingredients in today’s rocky road. If you’re a PB fan, I can guarantee that you’ll be falling head over heels in love with this no-bake sweet treat I’m sharing with you today.

Ingredients You Need For The Rocky Road:
- 400g Of Milk Chocolate
- 100g Of Golden Syrup
- 100g Of Unsalted Butter
- 150g Of Smooth Peanut Butter
- 300g Of Digestive Biscuits, Broken Into Small Pieces
- 150g Of Mini Marshmallows
- 200g Of Reece’s Peanut Butter & Milk Chocolate Flavoured Mini’s
- 100g Of Yellow, Orange & Red Smarties
Ingredients You Need To Decorate:
- 300g Of Milk Chocolate
- 100g Of Smooth Peanut Butter, Loosened
- 100g Of Reece’s Peanut Butter & Milk Chocolate Flavoured Mini’s
Ingredients You Need For The Rocky Road:
- Firstly, gather together your equipment and ingredients and line a 9” square, loose-bottomed baking tin with parchment paper.
- Secondly, in a large mixing bowl, add the 300g of broken up digestive biscuits, 150g of mini marshmallows, 200g of Reece’s minis and 100g of coloured smarties and mix together.
- Next, in a large saucepan, over a low heat, melt together the 400g of milk chocolate, 100g of golden syrup, 100g of unsalted butter and 150g of peanut butter, until smooth.
- Once melted together, pour the wet ingredients over the dry and mix together until everything is evenly coated in the chocolate mixture.
- Pour the rocky road mixture into the prepared baking tin and using a spatula, press the mixture down into the tin until compact.
- Set the tin to one side.
Ingredients You Need To Decorate:
- In a medium saucepan, over a low heat, melt the milk chocolate.
- Once melted, remove from the heat and pour over the top of the rocky road and spread out evenly to all four corners.
- In a small piping bag, add the loosened peanut butter.
- Snip the very tip of the piping bag off and pipe lines from one side of the tin to the other.
- Then, using a knife, carefully run the knife in the opposite direction to the lines to create a feathered effect across the top of the rocky road.
- Sprinkle the 100g of halved Reece’s minis across the top of the chocolate.
- Place the rocky road into the fridge to chill for a minimum of 4 hours, until everything is perfectly set.
- Finally, once chilled, remove from the baking tin and cut into 16 pieces and then it’s ready to be served.
That’s your Peanut Butter Rocky Road prepared, decorated, chilled and cut, ready for you to enjoy!
Notes:
- Store in an airtight container in the fridge for up to 2 weeks.
- This rocky road can be wrapped tightly and froze for up to 3 months.
- You can easily swap out any of the rocky road ingredients I’ve used to make it to your preferred taste.
