Jack’O Lantern Sugar Cookie Sandwiches Recipe!

I can’t believe I’m writing this but today’s recipe is the last of my halloween bakes for 2025. Can someone please explain to me where the time is going? I blinked and that’s October done and dusted for another year… crazy!

Anyway, I wanted to end my 2025 halloween bakes with a recipe super easy to recreate and as always, tastes absolutely blooming delicious so I knew these Jack’O Lantern cookie sandwiches would be perfect.

I actually had an AD pop up on my nightly scroll for a pack of halloween pumpkin cookie cutters and I won’t lie, I didn’t even hesitate in buying, they went straight into my basket and I checked out.

These cutters instantly got my creative juices flowing and that’s how today’s cookie sandwiches were created.

Biscoff and hazelnut spread sandwiched between two delicious sugar cookies – what’s not to love?

Ingredients You Need For The Sugar Cookie:

  • 100g Of Unsalted Butter
  • 100g Of Caster Sugar
  • 2 Large Eggs
  • 1tbsp Of Vanilla Bean Paste / Extract
  • 30g Of Cornflour
  • 300g Of Plain Flour

Ingredients You Need For The Filling:

  • 6tbsp Of Biscoff Spread
  • 6tbsp Of Hazelnut Spread

How To Make The Sugar Cookie Pumpkins:

  • Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper.
  • Secondly, in a large bowl, using an electric whisk, beat together the 100g of unsalted butter with 100g caster sugar until light and fluffy.
  • One at a time, beating well between each addition, beat in the 2 large eggs and 1tbsp of vanilla extract until incorporated.
  • Next, add in the 30g of cornflour and 300g of plain flour and beat with the whisk until the mixture comes together into a dough (TIP: the dough may seem slightly sticky, don’t worry, that’s the perfect texture).
  • Now, cut out two large pieces of parchment paper, place one sheet onto a baking tray and lightly dust with flour.
  • Place the dough on the lightly floured sheet and top with the second sheet of parchment paper.
  • Then, using a rolling pin, roll the dough out to a 1inch thickness.
  • Once the dough has been rolled out, place the baking tray with the rolled dough into the fridge and allow to chill for 40 minutes.
  • As the chill time is coming to an end, preheat the oven to 200C / 180C Fan / Gas Mark 6.
  • Take the dough out the fridge, remove the top piece of parchment paper and using the pumpkin cutter and embosser, cut out and emboss 12 pumpkin shapes.
  • Using the pumpkin face cutters, carefully cut out the faces of half the pumpkins, leaving the other half plain.
  • Place each pumpkin shaped cookie onto a prepared baking tray.
  • Place the cookies into the oven and bake for 8-10 minutes, until golden brown at the edges.
  • Once baked, remove from the oven and allow the cookies to cool slightly on the baking trays before transferring onto a wire rack to cool completely.

How To Assemble:

  • Now cool, it’s time to assemble.
  • On the base of 3 cookies (without a pumpkin face), add a tbsp of biscoff spread and on the remaining 3 cookie bases, add a tbsp of hazelnut spread.
  • Finally, top each of the bases with the pumpkin cookies that have faces and gently press together to sandwich.

That’s your Jack’O Lantern Sugar Cookie Sandwiches prepared, chilled, cut, baked and sandwiched, ready for you to enjoy.


Notes:

  • You can store these cookies in an airtight container in the fridge for 3-4 days.

  • You can use any kind of spread you prefer, all will taste delicious sandwiched between these sugar cookies.

I am obsessed with these cookie cutters, ridiculously cheap but create the most incredible looking cookies – they are an absolute bargain. You all need these cutters asap!
