You may have noticed if you follow my recipes that coconut isn’t an ingredient I work with very often.
I have no reason other than its never been one of my favourite flavours, therefore I tend to overlook it. Well, today that stops!
When scrolling through instagram recently, I saw the incredibly talented Kat, also known as ‘TheBakingExplorer’ online, had posted a chocolate and coconut loaf cake which instantly caught my eye.

Like I mentioned above, I haven’t played around with coconut too much but i know it is a truly loved ingredient across the globe so I wanted to play around with it more.
After making, baking and decorating todays recipe, I can hand on heart say that coconut when used correctly, is blooming delicious.
This was very quickly devoured and has become a firm favourite with my friends and family – which I can guarantee it will with yours also!

Ingredients You Need For The Coconut Loaf Cake:
- 200g Of Unsalted Butter Or Baking Spread
- 200g Of Caster Sugar
- 4 Large Eggs
- 175g Of Self-Raising Flour
- 25g Of Cocoa Powder
- 100g Of Desiccated Coconut
Ingredients You Need To Decorate:
- 150g Of Unsalted Butter, Softened
- 200g Of Icing Sugar
- 2tbsp Of Coconut Extract (or Vanilla Bean Paste / Extract – This Is Optional)
- 6 Bounty Bars, Chopped Into Chunks
How To Make The Coconut Loaf Cake:
- Firstly, gather together your equipment and ingredients, line a 2lb loaf tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
- Secondly, using an electric mixer, cream together the 200g of butter with 200g of caster sugar until light and fluffy.
- One at a time, beating well between each addition, mix in the 4 large eggs and 2tbsp of milk until combined.
- Next, gently mix in the 100g of desiccated coconut, 175g of self-raising flour and 25g of cocoa powder until all ingredients are fully combined.
- Pour the batter into the pre-lined loaf tin and place into the oven to bake for 1 hour or until a skewer inserted into the centre comes out clean.
- Once baked, remove from the oven and allow to cool right down in the tin before transferring to a wire rack.
How To Decorate:
- Now that the loaf cake is cool, it’s time to decorate.
- Using an electric mixer, beat the 150g of unsalted butter on its own for a few minutes until pale and loosened.
- Add 2tbsp of coconut extract (or vanilla extract – this is optional) and beat again until incorporated.
- Next, a little at a time, beating well between each addition, add the 200g of icing sugar until a smooth buttercream has formed.
- Transfer the buttercream into a piping bag with a circle piping tip attached and pipe the buttercream onto the top of the coconut loaf (you could also spread the buttercream on-top with a spoon).
- Finally, top with all the bounty bar chunks and place into the fridge for 10 minutes to set, before cutting into slices and serving.
That’s your Chocolate & Coconut Loaf Cake prepared, baked, cooled and decorated, ready for you to enjoy!
Notes:
- This loaf cake can be stored in an airtight container, in a cool place for up to 3-5 days.
- You can also freeze this cake as long as it’s well wrapped for up to 3 months.
- I’ve used a good quality coconut extract for the buttercream, I wouldn’t recommend using an essence.
