Banana & Blueberry Muffins Recipe!

Hello lovelies,

Wow, it’s been a hot minute hasn’t it? I can only apologies for the lack of content since March – I would love to say I’ve been galavanting all over the world but truth is, I somehow prolapse two disc’s in my back which left me unable to move and in excruciating pain.

How I did it remains a mystery but due to being unable to move and in such pain, I’ve not been able to get into the kitchen and bake for over 12 weeks. Bakers far and wide will understand me when I say I’ve been having baking withdrawal symptoms, it’s been a nightmare.

BUT, I’m back! Still in pain but back and I couldn’t be happier. I’ve missed baking & sharing my recipes with you guys, I really have!

I thought I’d start with something simple to ease myself back into baking and what better than a batch of delicious muffins? Banana and blueberry muffins to be precise.

Honestly guys, these muffins are an absolute must try! They are ridiculously quick and easy to make and bake, they are the perfect sweet treat to grab for on the go and quite frankly, taste utterly devine. Do I need to go on…?

Ingredients You Need:

  • 330g Of Plain Flour
  • 1tbsp Of Baking Powder
  • 1/4tsp Of Ground Nutmeg
  • 1/4tsp Of Ground Cinnamon
  • 227g Of Unsalted Butter, Melted & Cooled
  • 110g Of Light Brown Sugar
  • 100g Of White Granulated Sugar
  • 3 Large Eggs, Room Temperature
  • 2tsp Of Vanilla Bean Paste / Extract
  • 170g Of Full-Fat Sour Cream
  • 3 Large Ripe Bananas, Mashed
  • 300g Of Fresh Blueberries
  • Demerara Sugar

How To Make The Muffins:

  • Firstly, gather together your equipment and ingredients, line a 12 hole muffin tin with muffin cases and preheat the oven to 220C / 200C Fan / Gas Mark 6.
  • Secondly, in a large bowl, sift together 330g of plain flour, 1tbsp of baking powder, 1/4tsp of ground nutmeg and 1/4tsp of ground cinnamon, then set to one side.
  • Next, in a separate large bowl, whisk together the 227g of melted and cooled unsalted butter, 110g of light brown sugar, 100g of white granulated sugar, 3 large eggs, 2tsp of vanilla extract, 170g of full-fat sour cream and 3 large mashed bananas until all the ingredients are fully incorporated.
  • Now, add the dry ingredients into the wet and using a rubber spatula, mix ingredients together until combined.
  • Now, fold in the 250g of fresh blueberries until combined.
  • Divide the batter evenly into each muffin case, making sure each case is 2/3rds full.
  • Press in some extra blueberries and sprinkle a small amount of demerara sugar onto the top of each muffin.
  • Place into the oven and bake for around 25 minutes, until the tops of the muffins are golden brown and a skewer inserted into the centre comes out clean.
  • Finally, once baked, remove the muffins from the oven and allow them to cool for around 15 minutes before serving or transferring to a wire rack to cool completely.

That’s your Banana & Blueberry Muffins prepared, baked and cooled, ready for you to enjoy!


Notes:

  • Store in an airtight container in the fridge for up to 3-5 days or 2-3 days at room temperature.
  • Whilst these muffins taste amazing for a few days after baking and cold, I’d recommend eating warm on the day of baking for the freshest taste.
  • If your oven runs hot, I’d recommend baking at 200C / 180C Fan / Gas Mark 5.
  • You can use fresh or frozen blueberries, I prefer fresh as they are more flavourful.
  • Don’t over mix the muffins as they will go dry.
