Hello lovelies,

I know I’ve shared 3 chocolate orange recipes this festive period and you may be slightly sick of them but I told you truthfully, I’m completely and utterly obsessed with this flavour combination and I just couldn’t let Christmas pass me by without sharing one more bake flavoured with chocolate orange.

I’m not even sorry as I know for a fact you guys are going to LOVE today’s bake.

Although, I can’t take full credit for today’s recipe… it’s actually inspired by the queen of baking herself, ms Jane Patisserie.

I was having my nightly scroll when Jane’s chocolate orange muffins popped up on my screen and instantly took my breath away and I instantly knew it was time to get my baking gear on and have some chocolatey fun.

Category: Sweet Treat

Servings: 12 Large Muffins

Prep Time: 10 Minutes

Bake Time: 25-30 Minutes

Decorating Time: 10 Minutes

Overall Time: 50-60 Minutes

Ingredients You Need For The Muffins:

  • 115g Of Unsalted Butter
  • 250g Of Light Brown Sugar
  • 2 Medium Eggs
  • 225g Of Self-Raising Flour
  • 25g Of Cocoa Powder
  • 125ml Of Whole Milk
  • 1tsp Of Orange Extract
  • 300g Of Terry’s Chocolate Orange, Chopped Into Small Chunks
  • 100g Of Milk Chocolate Chips

Ingredients You Need For The Decorations:

  • 100g Of Milk Chocolate
  • 12 Terry’s Chocolate Orange Segments

How To Make The Muffins:

  • Firstly, gather together your equipment and ingredients, line a 12 hole muffin tin with muffin cases and preheat the oven to 190C / 170C Fan / Gas Mark 5.
  • Secondly, in a large bowl, using a stand or hand mixer, beat together the 115g of unsalted butter with 250g of light brown sugar until light and fluffy.
  • Next, one at a time, add in the 2 medium eggs, beating well between each addition.
  • Now, add in the 224g of self-raising flour and 25g of cocoa powder to the mixture and beat again until combined.
  • Pour in the 125ml of whole milk and 1tsp of orange extract and gently beat in to the mixture until fully combined (try not to over beat the mixture as the muffins will become dense).
  • Fold through the 300g of chopped up terry’s chocolate orange and 100g of milk chocolate chips.
  • Split the muffin mixture evenly between the 12 muffin cases until 2/3 full and then place into the oven to bake for 25 minutes or until a skewer inserted into the centre comes out clean (a few rogue crumbs is fine, just not wet mixture).
  • When baked, remove from the oven and allow to cool in the muffin tin for 10 minutes before transferring the muffins to a wire rack to cool completely.

How To Decorate:

  • Now that the muffins have cooled, it’s time to do a simple decoration.
  • In a microwavable bowl, add the 50g of milk chocolate, place the bowl into the microwave and in 20 second blasts, blast the chocolate until fully melted.
  • Spoon a small amount of melted chocolate onto the centre of each muffin.
  • Finally, place a chocolate orange segment onto top of each centre of melted chocolate. Allow to the chocolate to set, then serve.

That’s your Chocolate Orange Muffins prepared, baked and decorated, ready for you to enjoy this Christmas!

Notes:

  • I personally prefer eating the muffins on the day of baking but they will last for up to 3-4 days in an airtight container at room temperature.
  • I used these muffin cases: https://amzn.eu/d/ewzcijS
  • If you’d prefer the muffins not to be too ‘orangey’, then I’d recommend skipping the 1tsp of orange extract and just allowing the chocolate orange to give the flavouring.
  • You don’t have to make these muffins chocolate orange, you can use the main part of this muffin recipe and change the chocolate fillings to whatever you prefer.

I really don’t feel like today’s pictures do these muffins justice so please listen to me when I tell you that these are an absolute ‘must try’ this festive season!

Perfectly paired with a warm cup of rosie-lee or hot choccy – these muffins are guaranteed to be a hit with all your loved ones.

You can thank me later *wink wink*!

Let me know in the comments below if you make these muffins yourself and if you do, what your thoughts are on them. Are these a hit or miss? Will you be making these this Christmas?

Sending you all tons of love & hugs as always,

Elle xo
