Rolo Cookie Bars Recipe!

I’m currently on a cookie bar hype, and I can’t ever see it ending! I’m constantly thinking of all these different yummy ingredients and how unbelievably good they would taste in a cookie bar.

The constant thinking of these bars is slowly but surely taking over my life and honestly, I’m not even mad about it!

So, take a wild guess what I’m back with today? Yup, that’s right, I’m back with a new cookie bar recipe and quite frankly, I couldn’t be more excited to share it with you!

The ingredient of choice today is Rolo’s and lord almighty do they just SLAP in these cookie bars. The caramel which oozes from the Rolo’s into the cookie dough is nothing short of perfection.

Ingredients You Need To Make These Rolo Cookie Bars:

  • 115g Of Unsalted Butter
  • 100g Of Light Brown Sugar
  • 60g Of Caster Sugar
  • 1 Large Egg
  • 2tsp Of Vanilla Bean Paste / Extract
  • 260g Of Plain Flour
  • 1.5tbsp Of Cornflour
  • 1/2tsp Of Bicarbonate Of Soda
  • 1/2tsp Of Baking Powder
  • 250g Of Milk Chocolate Chips
  • 330g Of Rolo’s

How To Make The Rolo Cookie Bars:

  • Firstly, gather together your equipment and ingredients, line a 8inch loose bottomed square tin with parchment paper and preheat the oven to 190C / 170C Fan / Gas Mark 4.
  • Secondly, in a large bowl, using an electric whisk, cream together the 115g of unsalted butter with the 100g of light brown sugar and 60g of caster sugar until light and fluffy.
  • Next, mix in 1 large egg and 2tsp of vanilla bean paste until just combined.
  • Fold in the 260g of plain flour, 1.5tbsp of cornflour, 1/2tsp of bicarbonate of soda, 1/2tsp of baking powder, 250g of Rolos and 200g of milk chocolate chips until a firm cookie dough forms.
  • Using your hands or a spatula, firmly and evenly press the cookie dough into the prepared baking tin.
  • Press the remaining 80g of Rolo’s and 50g of milk chocolate chips into the top of the cookie dough.
  • Place the baking tin into the oven and bake for 20-25 minutes, until slightly golden on top.
  • Once baked, remove from the oven and allow to cool for 20 minutes in the tin, before transferring onto a wire rack to cool completely.
  • Finally, when the cookie bar has completely cooled, cut into 16-18 squares,
  • That’s your Rolo Cookie Bars prepared and baked, ready for you to enjoy!

Notes:

  • These cookie bars can be left at room temperature, in an airtight container for 4-5 days.

The photos alone have my mouth watering all over again, let alone the taste of them.

Served warm or cold, these cookie bars are just so damn good! An absolute must try in my opinion!
