It’s been a hot minute since I shared something fruity so I thought I’d break up my very chocolatey feed for a ultra summery, zesty lemon curd muffin that I know you lemon lovers out there will adore.
Now, I can’t take credit for today’s recipe as it’s inspired by the queen of all things baking, ms Jane’s Patisserie!
Jane shared these lemon curd muffins back in 2024 and they’ve been on my list of ‘sweet treats to bake’ ever since way back then and with it being the midst of summer, I felt like now was the perfect time to get my arse into gear and to finally bake them.
They caught my attention immediately as not only did they look incredibly delicious but I come from a family of lemon lovers so I knew they’d go down a treat with them and let’s just say… I wasn’t wrong! I don’t even think they lasted 48 hours before the entire batch was gobbled up.
A lemon flavoured muffin batter thats centre is filled to the brim with lemon curd and the whole muffin is topped with a streusel – if that doesn’t sound dreamy to you, I’m not sure what will.
These are super quick and easy to make and bake, they don’t require any decorating and I can guarantee you’ll be obsessed with the finished product!

Ingredients You Need For The Streusel:
- 45g Of Plain Flour
- 30g Of Caster Sugar
- 15g Of Unsalted butter
Ingredients You Need For The Lemon Muffins:
- 75g Of Unsalted Butter, Melted
- 75ml Of Vegetable Oil
- 175g Of Light Brown Sugar
- 2 Medium Eggs
- 2tsp Of Lemon Extract
- 250g Of Plain Flour
- 1tsp Of Baking Powder
- 125ml Of Buttermilk
- 150g Of White Chocolate Chips
- 200g Of Lemon Curd
How To Make The Streusel:
- Firstly, gather together your equipment and ingredients, line a 12 hole muffin tin with 12 muffin cases and preheat the oven to 200C / 180C Fan / Gas Mark 4.
- Secondly, in a bowl, rub together the 45g of plain flour and 30g of caster sugar with the 15g of unsalted butter until it resembles breadcrumbs.
- Set to one side.
How To Make The Lemon Muffins:
- Next, in a large mixing bowl, mix together the 75g of melted unsalted butter, 75ml of vegetable oil, 175g of light brown sugar and 2 medium eggs until combined.
- Now, add the 2tsp of lemon extract and mix again.
- Carefully fold in the 250g of plain flour and 1tsp of baking powder until combined.
- Stir in the 125ml of buttermilk until combined.
- Fold in the 150g of white chocolate chips until evenly distributed throughout the muffin batter.
- Split the muffin batter evenly between the 12 muffin cases.
- Now, add 200g of lemon curd into a piping bag and snip the tip of the piping bag off.
- Insert the cut piping bag into the centre of the muffin and pipe the lemon curd from the bottom to the top of the muffin.
- Sprinkle a generous amount of the pre-made streusel over the top of the 12 muffins.
- Place into the oven and allow to bake for 25-30 minutes until golden brown.
- Finally, I would recommend leaving the muffins to cool for 30 minutes before serving.
That’s your Lemon Curd Muffins prepared, baked and cooled, ready for you to enjoy!
Notes:
- Store these muffins in an airtight container for up to 4 days at room temperature but would recommend for the freshest taste eat within the first couple of days.
- You can freeze the muffins for up to 3 months. I would recommend wrapping them individually in clingfilm and before eating, thaw them in the fridge for 2-3 hours.
