Ultra Chocolatey Cookie Pie Recipe!

If your someone whose really wanting to indulge this week or really wanting something sweet and naughty to eat – then this recipe is for you!

I’ve seen these cookie pies spiralling the internet for a while now. I’ve seen many bakers/bakeries sharing their own homemade version on insta so you best believe I wanted to jump on the band wagon and make my own version of this absolute beauty.

It’s been on my list of bakes to do for a while now but it was when my bestie asked if I could make one for her niece’s birthday, that I finally got my apron on, got my butt into the kitchen and got these fingers of mine to work.

So, the cookie your seeing in todays photos is actually my trial run cookie pie. With that being said, it came out that good that I couldn’t not share with you guys today! I must say, for a first attempt at ever making one of these, I was chuffed with the outcome.

Now, I will mention that it’s quite a lengthy process making this pie BUT don’t let that put you off. The steps are really easy to follow and believe me when I say, you won’t be disappointed with the finished product.

Ingredients You Need For Cookie Dough:

  • 200g Of Unsalted Butter
  • 225g Of Light Brown Sugar
  • 100g Of White Granulated Sugar
  • 1 Medium Egg
  • 1 Egg Yolk
  • 3tsp Of Vanilla Extract
  • 425g Of Plain Flour
  • 2tbsp Of Cornflour
  • 1.5tsp Of Bicarbonate Of Soda
  • 400g Of Milk Chocolate Chips

Ingredients You Need For Filling:

  • 2 Jars Of Duo Chocolate Spread
  • 1 Munchies Caramel & Biscuit Bar

How To Make Cookie Pie:

  • Firstly, gather together your equipment and ingredients and line only the base of a 8inch, loose bottomed cake tin.
  • Secondly, in a large bowl, using an electric whisk, beat together the 200g of unsalted butter, 225g of light brown sugar and 100g of white granulated sugar until pale in colour and fluffy in texture.
  • Next, beat in the 1 medium egg, 1 egg yolk and 3tsp of vanilla extract.
  • Fold in the 400g of milk chocolate chips.
  • Now, mix in the 425g of plain flour, 2tbsp of cornflour and 1.5tsp of bicarbonate of soda until a thick cookie dough forms.
  • Using a pair of scales, split the cookie dough into three equal portions (roughly 475g each).
  • Press one third of the cookie dough evenly onto the bottom of the lined cake tin.
  • Press the second third of the cookie dough around the sides of the cake tin evenly (TIP: I would recommend making this as thick as possible with the amount of dough you have).
  • In a microwaveable bowl, add the two jars of duo chocolate spread and place into the microwave. In 10 second blasts, blast the spread until it has loosened slightly.
  • Pour the loosened spread into the base of cookie dough pie.
  • Using a knife, chop up the munchies chocolate bar into small pieces.
  • Then scatter the small pieces on-top of the spread inside the cookie pie.
  • Place the cookie pie into the freezer and freeze for one hour.
  • Once frozen, cover the top of the cookie dough pie with the remaining third of the cookie dough, making sure to seal the edges well.
  • Place the cookie pie back into the freezer and freeze for another hour.
  • When it’s coming close to the end of the freezing time, preheat the oven to 200C / 180C Fan / Gas Mark 5.
  • Once frozen and the oven is pre-heated, place the cookie pie into the oven and cook for 30-35 minutes, until the cookie dough is golden on top.
  • When baked, take out the oven and leave to cool on the side for at least one hour before placing into the fridge to chill overnight (DO NOT at remove from the cake tin).
  • The next morning, take the cookie pie out the fridge and let sit for 10-20 minutes. Once that time is up, very carefully remove the cookie pie from from the cake tin.
  • Finally, using a sharp knife, portion the cookie pie into slices and serve.

That’s your Cookie Pie prepared, frozen, baked and refrigerated, ready for you to enjoy!

This pie really does resemble beauty and the beast! It’s blooming huge but my word is the taste spectacular.
