Raspberry & Passionfruit Cookie Recipe!

If you’ve been around here a while, you’ll know it’s no secret that I have a huge love for baking cookies!

So, take a wild guess what I’m sharing with you today? Nope… it’s not a cake nor a tart recipe… it’s another cookie recipe! I can’t help it, okay? my love for baking different cookies grows fonder everyday.

Again, I can’t take credit for these incredible cookies I’m sharing with you today! I came across these on Pinterest and they instantly caught my eye. Not just because of the incredible vibrant colours but because I’d never made a cookie like these before. So, todays recipe is originally created by the extremely talented baker: The Deeper Living.

Anyway, I’ve shared a couple of sugar cookie recipes here on the blog before and they have always been a hit with you guys so I’m back again with another, only this time, it’s got a fruity twist.

As you’ll know if you love to bake, raspberries and passionfruit are both incredibly strong flavours so I won’t lie, I was unsure as to wether they would work cohesively together rather than being overpowering and almost like a soap flavour (as let’s be honest, we’ve all tried a fruity/floral bake before and felt like you was eating a bar of soap, right? Haha). Let’s just say, the answer to my unsureness is plain and simple being that I’m sharing these with you… they work bloody beautifully together!

Ingredients You Need For Cookies:

  • 345g Of Plain Flour
  • 3/4tsp Of Baking Powder
  • 225g Of Unsalted Butter
  • 350g Of Caster Sugar
  • 2tsp Of Vanilla Extract
  • 1 Egg
  • 1 Egg Yolk
  • 20g Of Freeze-Dried Passionfruit Crunch
  • 15g Of Freeze-Dried Raspberries
  • Pink, Yellow & Orange Food Colouring

How To Make The Cookies:

  • Firstly, gather together your equipment and ingredients, line two baking trays with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, whisk together the 345g of plain flour and 3/4tsp of baking powder until incorporated, then set aside.
  • Next, in a separate large mixing bowl, using an electric whisk, beat together the 225g of unsalted butter and 350g of caster sugar until pale in colour and fluffy in texture.
  • Next, add the 2tsp of vanilla extract, 1 egg and 1 egg yolk and beat again for 2-3 minutes until well combined.
  • In small batches, add the dry ingredients to the wet ingredients and beat on a low speed until combined and a dough has formed.
  • Using a pair of scales, divide the cookie dough into three equal size portions and then place into three different bowls.
  • In a spice grinder grind the freeze-dried passionfruit crunch until it’s a fine powder.
  • Once the passionfruit crunch is a powder, add the powder in to one of the bowls with one third of the cookie dough along with orange food colouring and using either your hands or a wooden spoon, incorporate the passionfruit powder and orange food colouring into the cookie dough.
  • Wash and dry the spice grinder and then, grind the freeze-dried raspberries until it’s a fine powder.
  • Once the raspberries are a powder, add the powder into one of the bowls with one third of the cookie dough along with pink food colouring and using either your hands or a wooden spoon, incorporate the raspberry powder and pink food colouring into the cookie dough.
  • With the final third of the cookie dough, add yellow food colouring and incorporate into the dough.
  • Now that all three doughs are coloured and flavoured, take a tablespoon of each cookie dough and roll the three pieces of cookie doughs between the palm of your hands to make one cookie dough ball (rolling them together like this will create a marbled look).
  • Place the cookie dough ball onto the pre-lined baking tray.
  • Continue to do the steps above until all the cookie dough has been used up. making sure you have 3-4 balls per baking tray to allow for the cookies to spread.
  • Place the baking trays into the oven and bake for 8-10 minutes, until the edges of the cookie are set (TIP: if the centre of the cookie looks a little under done that’s okay, it will continue to firm up once out the oven).
  • Finally, remove the cookies from the oven once baked, allow to cool on the baking tray for 5 minutes before transferring to a wire rack to cool further.

That’s your Raspberry & Passionfruit Cookies prepared, baked and cooled, ready for you to enjoy!

I hold my hands up and say that I was completely wrong about the flavours of todays cookie. They are strong flavours but my lord do they work beautifully with one another to create the tastiest cookies!

Something a little different from me cookie wise today! Im defiantly going to be playing around with this recipe in the future with different flavour and colour combos. These are far to good not to re-create again and again.
