Mini Strawberry Pies Recipe!

Hello lovelies,

It has come to my attention that I’ve barely done any bakes with strawberries this summer and I can only apologies for that. I can’t believe I’ve abandoned them like this, especially as it’s usually one of my favourite fruits to bake with… I’m shocked with myself, I really am.

So, before my summer content comes to an end, I just had to do a bake based purely around strawberries. No other fruit involved, just allowing the strawberries to take centre stage and boy am I excited to share this recipe with you. Its delish.

For a while now I’ve been wanting to create some summer inspired mini pies – they always catch my eye when I see someone’s made them and thought it was about time I got my butt into gear and made a batch of my own.

You guys know me well enough at this point to know what I’m about to say… that’s right, I was completely inspired by a recipe I saw on Pinterest recently. Ive changed a few of the ingredient measurements but overall, I followed their recipe and I can’t begin to tell you how OBSESSED I am with the finish result of these little beauties.

Such easy steps to follow and simple ingredients to buy BUT the outcome is utterly delicious. Alicia (The Baker Upstairs) absolutely nailed this recipe and I couldn’t not share it with you guys! I know for a fact you’ll thank me later…

Prep Time: 25 Minutes

Cook Time: 18-20 Minutes

Overall Time: 45 Minutes


Ingredients You Need:

  • 600g Of Strawberries, Stork Chopped Off
  • 80g Of Granulated Sugar
  • 4tbsp Of Cornflour
  • 3tsp Of Lemon Juice
  • 2 Ready-To-Roll Puff Pastry
  • 1 Egg
  • 1tbsp Of Water
  • Sprinkle Of Demerara Sugar

How To Make Tarts:

  • Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper.
  • Secondly, in a large bowl, mix together 600g of strawberries, 80g of granulated sugar, 4tbsp of cornflour and 3tsp of lemon juice.
  • Next, add the strawberry mixture into a large saucepan and on a medium heat, bring the mixture to a simmer and leave to simmer for around 5 minutes until the mixture begins to thicken.
  • Once thickened, remove the strawberry mixture from the heat and allow to cool right down.
  • When the mixture has cooled, preheat the oven to 220C / 200C Fan / Gas Mark 7.
  • Take one of your ready-to-roll pastries out the fridge and roll out.
  • Using a 10inch circle cutter, cut out 6 circles, 3 for the bottom and 3 for the top.
  • Place 3 of the pastry circles onto the lined baking tray.
  • With a small heart shaped cutter (or make a heart stencil yourself) and cut a heart out of the centre of the 3 left over circles.
  • Spoon around 4tbsp of the strawberry mixture onto the centre of the 3 pastry circles which are on the baking tray. Then, place the 3 pastry circles with the cut out heart centre on top of the strawberry mixture.
  • Using your fingertips, gently press around the outsides of the pastry to seal the top and bottom pastry circles together. Then, using a fork, seal all the way round each tart.
  • Repeat this with the second ready-to-roll pastry.
  • Once the strawberry tarts have been made, in a cup, whisk together 1 egg and 1tbsp of water.
  • Using a pastry brush, brush the egg mixture over the top of each of the tarts.
  • Sprinkle some Demerara sugar over the top of the egg washed tarts.
  • Place the tarts into the oven for around 18-20 minutes until golden brown.
  • Finally, once baked, take out the oven and allow to cool on baking trays for 2-5 minutes before transferring onto a wire rack to cool down completely.

That’s your Mini Strawberry Pies prepared, baked, cooled and ready for you to enjoy!

I absolutely love a recipe which includes fresh strawberries in the summer, demolishing a punnet of strawberries in record time is my hidden talent. So, adding them to these pies was absolutely dreamy.

How amazing is the finish of these pies though? The little cut out heart centres are SO cute and really add a lovely touch to these pies.

You honestly can’t get easier than this!
