It’s been on my ‘to-do list’ for a while now to make some summer inspired cupcakes and share them with you all.
I’ve actually been really enjoying working on perfecting my cupcake recipe and working on my buttercream skills over the last few weeks. So, after many cupcakes being made and decorated, I’m finally here today sharing with you the most perfect, moist cupcake recipe with the most delicious buttercream.
Although, these aren’t just any old cupcakes with buttercream, I’ve added a slight twist. I’ve actually paired todays cupcakes with the most delicious summertime topping which I think you’ll all love… peach cobbler.
I actually chose peach cobbler as my cupcake topping as it’s officially one of my favourite deserts to have during the summer. It’s so fresh, light and juicy – I love it! I love the way the peach pairs so nicely with the crumble topping, in all honesty, its just a delight to eat. So, I knew pairing peach cobbler with these cupcakes would be a match made in heaven.

So, without further ado, let’s get baking:

Prep Time: 20 Minutes
Cook Time: 15 Minutes
Decorating Time: 20-30 Minutes
Overall Time: 1Hour
Ingredients You Need To Make Peach Cobbler Cupcakes:
- 8oz Of Butter / Stork
- 8oz Of Caster Sugar
- 4 Large Eggs
- 8oz Of self-Raising Flour
- 1tsp Of Baking Powder
- 2tsp Of Vanilla Extract
Ingredients You Need For Buttercream:
- 150g Of Unsalted Butter
- 300g Of Icing Sugar
- 2tsp Of Vanilla Extract
Ingredients You Need For Crumble:
- 25g Of Butter
- 50g Of Plain Flour
- 25g Of Demerara Sugar
Ingredients For Peaches:
- 2 Peaches, Peeled & Diced Small
How To Make Cupcakes:
- Firstly, gather together your equipment and ingredients, line a cupcake tin with 16 cupcake cases and preheat the oven to 180C / 160C Fan / gas Mark 4.
- Secondly, in a large bowl, using an electric whisk, beat together the 8oz of butter with 8oz of sugar until light in colour and fluffy in texture.
- Next, one at a time, beat in your 4 eggs until well combined.
- Beat in your 2tsp of vanilla extract.
- Now, fold in the 8oz of self-raising flour and 1tsp of baking powder until fully combined.
- Using a tbsp or ice cream scoop, pour your cake batter into the cupcake cases and place in the oven for 15 minutes or until golden brown and a skewer placed into the centre comes out clean.
- Once baked, take out the oven and leave in the cupcake tin to cool for 10 minutes before removing from tin and placing onto a wire rack to cool down completely.
How To Make Crumble:
- In a large bowl, using your fingertips, rub the 25g of butter with the 50g of plain flour together until it resembles breadcrumbs.
- Then, mix in the 25g of Demerara sugar.
- Set Aside.
How To Buttercream:
- Once the cakes have cooled down, it’s time to make the buttercream.
- In a large bowl, beat the 150g of unsalted butter until lighter in colour.
- Next, a little at a time, add the 300g of icing sugar until the buttercream forms.
- Add the 2tsp of vanilla extract and mix.
- Now, place a star shaped nozzle into a piping bag.
- Place the buttercream into the piping bag.
How To Assemble Cakes:
- Now that everything is ready, is time to assemble.
- Pipe your buttercream onto the cupcakes.
- In the centre of the buttercream, add a few of the diced peaches.
- Finally, sprinkle the crumbs over the top of the peaches and buttercream.
That’s your Peach Cobbler Cupcakes prepared, baked, decorated and ready for you to enjoy!

I honestly can’t put into words how beautifully these ingredients pair together. These are by far one of my favourite cupcake recipes I’ve made and shared here on the blog (and that’s a big statement as I love everything I share haha).

I’m admittedly not a huge fan of most fruit-based pies, but for some reason Peach Cobbler sounds so much better in cupcake form!
