Mini Egg Banana Loaf Cake Recipe!

Hi, hello, welcome back and a Happy New Year to you all.

Well… that was a longer break than I intended. I had planned to take January off as I have the last couple of years to re-inspire myself but my chronic illnesses had other plans. With my bowel condition worsening, I had no choice but take February off too and I can only apologies for that.

But, I’m finally back and seen as it’s March, I wanted to jump straight into the Easter content. I didn’t get a chance to share any Easter bakes last year due to two prolapsed discs so to make up for it, I’m sharing as much as I possibly can with you this year!

Starting strong with this ‘Mini Egg Banana Loaf Cake’ which has very quickly become a firm favourite of mine and my loved ones.

I love me a slice of a warm, simple banana loaf that’s crammed with chocolate chips. I honestly didn’t think it could get much better but add mini eggs to the equation and you get a slice of something that’s nothing short of perfection. chef’s kiss.

It’s a bunch of simple ingredients that when put together create the most incredible flavour bomb on the taste buds. It doesn’t get much better than this, I can promise you that!

Ingredients You Need For The Loaf Cake:

  • 140g Of Unsalted Butter
  • 140g Of Golden Caster Sugar
  • 2 Eggs
  • 2tsp Of Vanilla Bean Paste / Extract
  • 140g Of Self-Raising Flour
  • 1tsp Of Baking Powder
  • 4 Ripe Bananas, Peeled & Mashed
  • 150g Of Milk Chocolate Chips
  • 200g Of Mini Eggs, Crushed

Ingredients You Need To Decorate:

  • 100g Of Milk Chocolate, Melted
  • 100g Of Mini Eggs, Crushed

How To Make The Loaf Cake:

  • Firstly, gather together your equipment and ingredients, line a 2lb loaf tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, beat together the 140g of unsalted butter with the 140g of golden caster sugar until light and fluffy.
  • Next, one at a time, beat in the 2 large eggs and 2tsp of vanilla bean paste until combined.
  • Now, fold through the 140g of self-raising flour, 1tsp of baking powder, the 4 mashed bananas, the 150g of milk chocolate chips and 200g of crushed mini eggs until everything is combined.
  • Evenly pour the loaf cake mixture into the lined loaf tin and place into the oven to bake for 50 minutes or until a skewer inserted into the centre comes out clean.
  • Once baked, allow to cool completely in the tin before carefully removing from the tin onto a wire rack.

How To Decorate:

  • Now that the loaf cake has been removed from the tin and is fully cooled, it’s time to decorate.
  • In a microwavable bowl, add the 100g of milk chocolate, place into the microwave and in 10 second blasts, blast the chocolate until fully melted.
  • Once melted, pour the melted chocolate into a small piping bag. Snip the very tip of the piping bag off and drizzle the melted chocolate generously across the top of the loaf cake.
  • Sprinkle the 100g of crushed mini eggs across the top of the loaf cake.
  • Finally, allow the chocolate to set at room temperature before serving.

That’s your Mini Egg Loaf Cake prepared, baked and decorated, ready for you to enjoy this Easter.


Notes:

  • Store in an airtight container, at room temperature for up to 5 days.
  • You can also put the loaf cake into the fridge if you’d prefer. However, I would recommend removing from the fridge up to 1 hour before serving to allow the cake to come to room temperature.
  • If half way through baking you find the loaf is browning too much / too quickly, place a piece of tin foil over the loaf cake and continue baking.

  • You can use any chocolate you prefer to go both in and on top of the loaf cake.

I’m not sure I can ever go back to a normal banana loaf again. The addition of mini eggs has completely changed the game for me.
