4 Summer Inspired Mini Loaf Cakes Recipes!

Hello lovelies,

Now, if you’ve been around here a while, you’ll know I absolutely love making loaf cakes. They are one of my favourite cakes to make and i think at this point in my baking journey, I’ve made my fair share of them. That being said, it isn’t going to stop me making more haha.

Talking of making more… whilst on Pinterest a couple of weeks ago, I came across a bunch of mini loaf cake pictures which instantly caught my eye. Why did it catch my eye you ask, well it was the fact that these mini loafs were so blooming small and cute – yes, I’m easily won over by small bakes.

As you’ll know by now, it doesn’t take much to inspire me and get my creative juices flowing. The pictures of these mini loafs had me hooked from the moment I laid eyes on them and I physically couldn’t resist making a batch of my own.

My mum actually treated me to a mini loaf tin a couple of weeks ago which I was absolutely stoked by (she really is the best, bless her). It’s a large tin with 8 loaf holes. So, rather than just making one batch of loaf cakes with all the same ingredients, I decided to go a little wild and do four different loaf cakes.

I know your thinking I’m mad making four different types of loaf cakes but I couldn’t help myself, I just loved using all these different ingredients to create four different cakes. All of which are summer inspired may I add.

We’ve got: 4 nutella loaf cakes, 4 apple and blackberry loaf cakes, 4 raspberry and lemon loaf cakes and finally, 4 honey and almond loaf cakes. Yes my lovelies, they are as good as they sound. Who could resist the temptation of these beauties?

Category: Sweet Treats / Deserts

Serves: 16

Prep Time: 15-20 Minutes

Cook Time: 30-40 Minutes

Decorating Time: 15 Minutes

Overall Time: 1Hour 15Minutes


Ingredients You Need For Loaf Cake Batter:

  • 14oz Of Butter / Stork
  • 14oz Of Caster Sugar
  • 7 Large Eggs
  • 14oz Of Self-Raising Flour
  • 2tsp Of Baking Powder

How To Make Loaf Cake Batter:

  • Firstly, gather together your equipment and ingredients, grease your mini loaf tins with butter well and preheat the oven to 200C / 180C Fan / Gas Mark 6.
  • Secondly, in a large bowl, using an electric whisk, beat together the 14oz of butter with 14oz of caster sugar until lighter in colour and fluffy in texture.
  • Next, one at a time, add in your 7 large eggs and beat well between each addition.
  • Now, fold in your 14oz of self-raising flour and 2tsp of baking powder until combined.
  • Using your scales, weigh the cake batter and then split the batter evenly into 4 separate bowls.

Ingredients You Need For Chocolate Cakes:

  • 1 Jar Of Nutella
  • 50g Of Dark Chocolate
  • 50g Of Dark Chocolate Chips

How To Make Chocolate Cakes:

  • Take one of the bowls with the loaf cake batter in and add 5tbsp of Nutella into the batter, then, using a spoon, mix the Nutella in until fully incorporated.
  • Now, pour the chocolate cake batter into four mini loaf tins and place in the oven for around 30-40 minutes until a skewer placed into the centre comes out clean.
  • Once baked, take out the oven and allow to cool in the tin for 10 minutes before transferring onto a wire rack to cool further.
  • When the cakes have cooled, it’s time to decorate.
  • In a microwavable bowl, add 50g of dark chocolate and in 20 second blasts, blast the chocolate until completely melted.
  • Once melted, pour the chocolate into a piping bag and snip a very small amount off the end of the piping bag.
  • Drizzle the chocolate diagonally over half of the cake.
  • Finally, add some dark chocolate chips on top of each cake.

Ingredients You Need For Apple & Blackberry Cakes:

  • 50g Of Apples, Chopped into Small Chunks
  • 50g Of Frozen Blackberries, Defrosted
  • 10g Of Icing Sugar

How To Make Apple & Blackberry Cakes:

  • Take one of the bowls with the loaf cake batter in and add the 50g of chopped apples and 50g of defrosted blackberries into the batter, then, using a spoon, fold in the fruit until fully incorporated.
  • Now, pour the apple and blackberry cake batter into four mini loaf tins and place in the oven for around 30-40 minutes until a skewer placed into the centre comes out clean.
  • Once baked, take out the oven and allow to cool in the tin for 10 minutes before transferring onto a wire rack to cool further.
  • When the cakes have cooled, it’s time to finish them off.
  • Finally, sprinkle over some icing sugar and top with any left over blackberries.

Ingredients You Need For Raspberry & Lemon Cakes:

  • 100g Of Fresh Raspberries
  • 4tsp Of Lemon Extract
  • 40g Of Icing Sugar
  • 2tsp Of Lemon Extract
  • 2tbsp Of Water
  • 8 Fresh Raspberries

How To Make Raspberry & Lemon Cakes:

  • Take one of the bowls with the loaf cake batter in and add 4tsp of lemon extract into the batter, then, using a spatula, fold in the 100g of fresh raspberries until fully incorporated.
  • Now, pour the raspberry & lemon cake batter into four mini loaf tins and place in the oven for around 30-40 minutes until a skewer placed into the centre comes out clean.
  • Once baked, take out the oven and allow to cool in the tin for 10 minutes before transferring onto a wire rack to cool further.
  • When the cakes have cooled, it’s time to decorate.
  • In a small bowl, add 40g of icing sugar and 2tbsp of water and mix together until a white icing forms (TIP: if the icing is too runny, add a touch more icing sugar and if it’s too thick, add a dash of water to loosen).
  • Once your icing has been made, add 2tsp of lemon extract and mix in well.
  • Pour your icing into a piping bag and snip the end of the piping bag off, drizzle the lemon icing over the 4 cakes.
  • Finally, add three fresh raspberries onto all of the finished cakes.

Ingredients You Need For Almond & Honey Cakes:

  • 100g Of Ground Almonds
  • 4tbsp Of Honey
  • 30g Of Flaked Almonds
  • 40g Of Icing Sugar
  • 2tbsp Of Water
  • 2tsp Of Honey

How To Make Almond & Honey Cakes:

  • Take one of the bowls with the loaf cake batter in and add 100g of ground almonds and 4tbsp of honey into the batter, then, using a spoon, mix the ground almonds and honey in until fully incorporated.
  • Now, pour the almond & honey cake batter into four mini loaf tins and place in the oven for around 30-40 minutes until a skewer placed into the centre comes out clean.
  • Once baked, take out the oven and allow to cool in the tin for 10 minutes before transferring onto a wire rack to cool further.
  • When the cakes have cooled, it’s time to decorate.
  • In a small bowl, add 40g of icing sugar and 2tbsp of water and mix together until a white icing forms (TIP: if the icing is too runny, add a touch more icing sugar and if it’s too thick, add a dash of water to loosen).
  • Once your icing has been made, add 2tsp of honey extract and mix in well.
  • Pour your icing into a piping bag and snip the end of the piping bag off, drizzle the honey icing over the 4 cakes.
  • Finally, finish off by adding 30g of flaked almonds on top of the 4 cakes.

That’s your 4 Summer Inspired Mini Loaf Cakes prepared, baked, decorated and ready for you to enjoy!

How damn cute are these loaf cakes tho? They may be mini but boy do these pack a beautiful punch in flavour!
