Vegan & GF Strawberry Tart Recipe!

Hello lovelies,

You know when you just have the urge to make something completely different to anything you’ve made before? Well, that was me a couple of weeks ago.

So, I was scrolling through Pinterest (as I always do) and came across this recipe for a ‘No Bake Strawberry & Vanilla Tart’, it caught my eye straight away with how stunning it looked on the photos and I just knew that, that was the bake to throw me out my comfort zone.

Therefore, todays bake is completely inspired by that recipe. I changed a few things to make the recipe my own, as I always do and honestly guys, I completely fell in love with the finished result.

This is the first bake I’ve looked at and thought it actually looks quite professional. Now, that’s not me being a big head (well kinda is… haha), I did actually tried to make it look as professional as possible as I wanted to challenge myself in the decorating department.

That being said, the making and decorating of this cake is incredibly easy. It looks complicated, may even sound complicated but hand on heart, this is such a easy recipe to throw together and the outcome is amazing!

So guys, there’s absolutely no excuse not to make todays recipe if it interests you. Get your ingredients and equipment together and let’s get making…

Ingredients You Need For Base:

  • 200g Of Free-From Digestive Biscuits
  • 130g Of Butter

Ingredients You Need For Strawberry Cream:

  • 200g Of Frozen Strawberries
  • 15g Of Maple Syrup
  • 10g Of Cornflour
  • 40ml Of Water

Ingredients You Need For Vanilla Cream:

  • 420ml Of Almond Milk
  • 3tsp Of Vanilla Paste
  • 30g Of Maple Syrup
  • 6g Of Xanthan Gum
  • 10g Of Cornflour

Ingredients For Decorating:

  • 50g Of White Chocolate
  • Freeze-Dried Strawberries
  • Freeze-Dried Raspberry Pieces
  • Edible Purple Petals
  • Pink Flower Cake Toppers

How To Make Base:

  • Firstly, gather together your equipment and ingredients.
  • Secondly, place 200g of digestive biscuits into a sandwich bag and using a rolling pin (or a food processor if you have one), bash the biscuits into a fine crumb.
  • Once you’ve got your biscuit crumbs, add into a large bowl with the 130g of melted butter and mix together.
  • Now, press the biscuit crumb into the bottom and up the sides of of 10inch loose bottomed pie dish and then set aside.

How To Make Strawberry Cream:

  • Firstly, put the 200g of frozen strawberries and 15g of maple syrup into a pan and heat over a medium heat to soften the strawberries.
  • Once softened, lower the heat and bring to the boil.
  • Whilst you’re waiting for mixture to boil, in a jug add 40ml of water and 10g of cornflour and mix together.
  • When the mixture begins to boil, add in the cornflour/water mixture and stir continuously and continue to cook for another 3 minutes.
  • Now, when the 3 minutes is up and your happy with your mixture, pour the strawberry cream onto the biscuit base and allow to harden.

How To Make Vanilla Cream:

  • Once the strawberry cream has hardened, its time to make your vanilla cream.
  • Firstly, in a small bowl, mix together 6g of xanthan gum with 4tsp of water and mix until a thick paste is formed.
  • Secondly, in a large saucepan, using a whisk, whisk together 400ml of almond milk, 3tsp of vanilla extract, 30g of maple syrup and the xanthan gum mixture.
  • Now bring the mixture to the boil.
  • Whilst you’re waiting for mixture to boil, in a jug add 20ml of almond milk and 10g of cornflour and mix together.
  • When the mixture begins to boil, add in the cornflour/almond milk mixture and stir continuously and continue to cook for another 3 minutes.
  • Once the 3 minutes is up, sieve the mixture to get rid of any lumps.
  • Pour the sieved mixture over the top of the strawberry cream.
  • Now, place the tart into the fridge and allow the vanilla cream to harden (TIP: it will set/feel like a jelly when hardened).

How To Decorate Your Tart:

  • Firstly, In a microwavable bowl, place your 50g of white chocolate and place into the microwave and in 30 second blasts, blast the chocolate until melted.
  • Next, place the melted chocolate into a piping bag, snip off the end and drizzle the chocolate from one edge to the other in the centre of the tart, making a drizzle chocolate line.
  • Finally, add all the decorative pieces (the dried strawberries and freeze-dried raspberries, edible purple petals and edible flower toppers).

That’s your Strawberry Tart prepared, hardened, refrigerated and decorated, ready for you to demolish!

I’m honestly SO chuffed with the outcome, it really does remind me of something you’d buy in a store (or is that just me being big headed again…).

I’m so glad I came across the original recipe, full credit to that baker, they really did make a delicious tart!

    I mainly eat a plant-based diet so it was lovely to see a vegan option here; it’s also great that there are vegan butter brnads and vegan white chocolate available to make this 100% plant-based. This sounds absolutely delicious!
