Father’s Day is fast approaching so I wanted to share a recipe with you all which is loved worldwide.
Why fig rolls? Well, ever since my dad was a little boy, he’s loved fig rolls. It’s always been a favourite of his and for months now he’s been going on at me to make him a batch. So, here you go dad, this one’s for you!
My dad is the strongest person I know. Our lives have been turned upside down by mental illness yet despite going through everything he has, my dad has always remained strong and fought through whatever has come his way. He hasn’t gone down without a fight and I’ll forever be in ore of him for that.
I truly have been blessed with the best, I know how incredibly lucky I am to have a dad as loving as mine. No matter what road I’ve wanted to take in life, he’s supported me continuously and is always my biggest fan.
After the scare we had with my dad a couple of months ago, it truly hit me how we take our parents for granted, we just expect them to always be there and that’s something I’ll never do again. I’ll forever treasure the bond I share with my dad.

Likewise with my mum, I can’t give my dad everything he deserves in life but what I can do is bake for him. My dad is one of my biggest supporters when it comes to my baking, he’s a very honest critic when trying my bakes which I always appreciate. So, I know he’ll appreciate me baking these and bringing a childhood memory back to life.
So, if fig rolls are a favourite of your dads, why not get baking them for Father’s Day? They are surprisingly easy to make SO get your apron on and let’s get backing…

Ingredients You Need To Make Biscuits:
- 175g Of Plain Flour
- 1/4tsp Of Baking Powder
- 50g Of Unsalted Butter
- 40g Of Light Muscovado Sugar
- 1 Egg
- 1/2tsp Of Vanilla Extract
How To Make Fig Filling:
- 200g Of Soft Dried Figs
- 25g Of Light Muscovado Sugar
- 1tsp Of Sweet Ground Cinnamon
- 1tsp Of Ground Ginger
How To Make The Biscuit:
- Firstly, gather together your equipment and ingredients and line a baking tray with parchment paper.
- Secondly, in a large bowl, sift together the 175g of flour with the 1/4tsp of baking powder, then set aside.
- Now, in a separate bowl, using an electric whisk, beat together the 50g of unsalted butter with the 40g of light muscovado sugar until pale and creamy.
- Next, add in 1 egg and 1/2tsp of vanilla extract and beat until combined.
- Putting the electric whisk onto a low speed, add the flour mixture in 3 batches until incorporated.
- Place the dough into cling film, wrap and place into the fridge to chill for 30 minutes, until firm.
How To Make The Filling:
- Tip the 200g of figs into a small pan so they are covering the base of the pan.
- Add in the 25g of sugar and enough water to cover the figs.
- Now, place the pan over a medium heat and bring to the boil.
- Once boiling, reduce the heat to give a fast simmer and cook, stirring with a wooden spoon for 5-8 minutes, until the figs are soft and the mixture is thick.
- Transfer the mixture to a food processor or blender, blintz the mixture into a paste.
- Add 1tsp of cinnamon and 1tsp of ginger into the blender and pulse until combined.
- Take the mixture out the blender and spread onto a plate.
- Place the plate into the fridge to allow to cool, chill and firm up for around 10 minutes.
How To Bring The Fig Rolls Together:
- Preheat the oven to 190C / 170C Fan / Gas Mark 5.
- Next, take the biscuit dough out the fridge and on a lightly floured surface, roll out the dough into a rectangle.
- Now, lightly flour your hands and using your hands, take the fig filling and roll it between your palms into a sausage.
- Lie the sausage down, around 1.5inch’s away from the left edge of the rectangle.
- Using an egg wash, brush the egg along the edge of the right side of the rectangle.
- Now, fold the left side of the rectangle over the top of the fig filling onto the egg washed right side, making sure the filling is completely covered (TIP: it should overlap and seal the fig filling in) .
- Using a sharp knife, cut the dough into as many fig rolls as you possibly can and place the fig rolls onto the pre-lined baking tray.
- Once you’ve cut out all your fig rolls, using a fork, gently press down onto the top of the fig rolls to give it that decorative look (this is optional).
- Place the fig rolls into the oven and allow to cook for 12-15 minutes until lightly browned.
- Finally, take the fig rolls out the oven and allow to cool for a couple of minutes on the baking tray before transferring over to the wire rack to further cool.
That’s your Fig Rolls prepared, chilled, baked and ready for you to enjoy!







Todays recipe was actually a Paul Hollywood recipe which I followed and the outcome was absolutely perfect!
My dad was in his absolute element when I made him these, a whole batch of fig rolls for him to demolish and believe me… they were demolished pretty quickly.
So, if anyones looking for the perfect Father’s Day biscuit to make this year, why not give these a try. It looks a long recipe but believe me, once your started it really doesn’t take that long and it isn’t as complicated as you’d think. I actually found it a very easy recipe to follow.
