Easter Cookie Dough For 2 Recipe!

For those of you who are new around here, one fact about me is that I’m a cookie dough girl through and through. I just adore it.

I love how quick & easy it is to make & bake and how easily the recipe can be altered to fit whatever your preference is when it comes to fillings.

I was having a nightly scroll through pinterest when I came across an Easter Cookie Dough recipe that the queen Jane’s Patisserie had shared and i knew straight away I had to recreate.

I mean, what better to fill your cookie dough full of than Easter chocolate?

I personally went for a couple of different types of mini eggs and guys, when I tell you that every mouthful of this desert was heavenly, you gotta believe me, okay?

This recipe I’m sharing today makes enough for two mini skillets, so perfect for sharing with a friend, for date night desert with your partner or if your a cookie dough lover, perfect to amount for yourself – there’s certainly no judgement here.

Ingredients You Need For The Cookie Dough:

  • 60g Of Unsalted Butter
  • 100g Of Light Brown Sugar
  • 1 Medium Egg
  • 2tsp Of Vanilla Bean Paste / Extract
  • 100g Of Plain Flour
  • 25g Of Cocoa Powder
  • 1/2tsp Of Bicarbonate Of Soda
  • 100g Of White Chocolate Chips
  • 160g Of Smarties Mini Eggs, Chopped

Ingredients You Need For Decorating:

  • 20g Of Milk Chocolate, Melted
  • Mini Eggs, Optional

How To Make The Cookie Dough:

  • Firstly, gather together your equipment and ingredients, line the base of two 6” skillets with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, beat together the 60g of unsalted butter with 100g of light brown sugar until light and fluffy.
  • Next, beat in the 1 medium egg and 2tsp of vanilla bean paste until combined.
  • Now, beat in the 100g of plain flour and 1/2tsp of bicarbonate of soda until a cookie dough forms.
  • Fold through the 100g of white chocolate chips and 160g of chopped smarties mini eggs until evenly distributed throughout the cookie dough.
  • Divide the cookie dough into two and press the cookie doughs into the base of both pre-lined skillets.
  • Place the cookie dough into the oven and bake for 12-15 minutes.
  • Once baked, remove from the oven and allow to cool for a couple of minutes.

How To Decorate:

  • Whilst the cookie dough is cooling down, in a microwavable bowl, add the 20g of milk chocolate, place into the microwave and in 5 second blasts, blast the chocolate until fully melted.
  • Transfer the chocolate from the microwave into a piping bag, snip the very tip of the piping bag off and drizzle the chocolate over the cookie dough.
  • Finally, top with some crushed and/or whole mini eggs and serve.

Notes:

  • These are best served on the day of making and baking. However, they can be stored in the fridge for up to 3 days. I would recommend heating up the cookie dough in the microwave for 2 minutes before serving to get a gooey centre.
  • You can use any Easter chocolates you like.
  • To serve 4 people, just double the recipe.
