Halloween Cookie Recipe’s!

Hello lovelies,

Halloween is fast approaching and as you all know last year I done “13 Days Of Halloween”. unfortunately this year that is not the case as I’ve just not been well enough to create the content. That being said, I’ve decided I couldn’t not put a couple of Halloween’y posts out there, as it just wouldn’t be right, so I’ve decided to do a couple of last minute Halloween Editions.

As you all know baking is one of my favourite things to do in my spare time and when it comes to Halloween it makes it that little bit more exciting. Why? Because there’s so many amazing things you can bake when it comes to Halloween, yet it doesn’t have hard or too “extra”, you can create simple yet effect bakes within a couple of hours.

Which is why I’ve made some Halloween cookies for you all today, quick and easy if your a last minute party, a gathering or whatever else you may want them for, these cookies will for fill every need. These cookies came out so much better than I thought they would and they are perfect for making/decorating with little ones! Anyway, before I ramble on for any longer, let’s get making;

Ingredients For The Cookie Dough;

  • 8oz/240g of butter, melted and cooled to room temperature
  • 10oz/300g of brown sugar
  • 6oz/180g of white sugar
  • 12 1/2oz/375g of all purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 2 large eggs
  • 2 teaspoons of vanilla extract

Ingredients For S’mores Cookies (+ Cookie Dough Ingredients);

  • 1 family size bag of small marshmallows
  • 1 bar of milk chocolate, chopped

How To Make S’mores Cookies;

  • Firstly, gather together the ingredients, equipment and preheat your oven to 375oF, 180oC. Then line a cookie sheet with parchment paper, ready for the cookies to go onto later.
  • Secondly, whisk together the flour, salt, and baking soda making sure to break up any large chunks.
  • Next, add the melted butter and whisk vigorously for around 1 minute, until light, fluffy and fully incorporated.
  • Then, whisk in one egg to the sugar-butter mixture, stirring until its fully mixed in. Scrape the sides of the bowl with your spatula and whisk the second egg in. Add the vanilla extract and scrape the sides of the bowl again.
  • Add the dry ingredients to the wet ingredients and stir with a spatula until it’s fully combined. Chill the dough for a minimum of 30 minutes to 2 hours before scooping.
  • Once the dough has chilled, using your hand, make a well in the centre of the dough. Add in the small marshmallows and chopped milk chocolate, then fold the cookie dough over itself to make sure the s’mores ad-in’s are distributed well.
  • When ready to bake – you can do this however you please, me personally as it’s Halloween I’m going to roll my dough out and cut mine into Halloween figures BUT you can just roll them into small balls and slightly flatten them with a fork. However you chose you to do them, place them onto your baking try at least 2-4cm apart so they have space to expand!
  • Bake for 10-12 minutes or until you you can see it is doughy in the centre but browning found the edges. Resist the edge to bake for longer as you will over bake them and loose that gooey centre.
  • Finally, Let them cool on a baking rack for 5-10 minutes before serving then enjoy!

Ingredients For “Birthday Cake” Cookies (+ Cookie Dough Ingredients);

  • 2 heaped teaspoons of sprinkles
  • 2 heaped teaspoons of chocolate sprinkles
  • 2 heaped teaspoons of white chocolate sprinkles
