The VIRAL Dot Cake Recipe!

Hello lovelies,

You all know me well enough by now to know that when a bake goes viral, I’m going to jump on the bandwagon wagon otherwise I get serious fomo *wink wink*.

In all seriousness, I absolutely love jumping on a trend which is making the baking world go crazy and the past few weeks, it’s been the ‘Dot Cake’ that has been all over my social media accounts.

I’ll be honest, I’d never heard of the ‘Dot Cake’ before now but from research, the cake has been around since 2017 but rose to fame in late May of this year when tiktokers around the world were recreating and sharing their versions online.

A Dot Cake is a simple vanilla sponge which is baked to perfection then cut out into glasses/cups, layered and/or topped with buttercream and dunked in a ton of sprinkles.

Now, from that description it doesn’t sound like anything too fancy compared to other viral bakes I’ve made but that’s why I fell in love with it. I adore the simplicity of the recipe and believe me when I say, these are little pots of pure joy!

These are the perfect cakes for any one of any skill set as it’s a super simple recipe to follow, takes little time to make, bake and decorate and I can guarantee the end result will be delicious.

Ingredients You Need For The Cake:

  • 340g Of Stork/Butter
  • 340g Of Caster Sugar
  • 6 Large Eggs
  • 2tsp Of Vanilla Bean Paste / Extract
  • 340g Of Self-Raising Flour
  • 1.5tsp Of Baking Powder

Ingredients You Need To Decorate:

  • 200g Of Unsalted Butter
  • 300g Of Icing Sugar
  • 2tsp Of Vanilla Bean Paste / Extract
  • Large Bag Of Rainbow Ball Sprinkles

How To Make The Cake:

  • Firstly, gather together your equipment and ingredients, line a 9×13” traybake tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, beat together the 340g of stork/butter and 340g of caster sugar until light and fluffy.
  • Next, in a cup, using a fork, whisk together the 6 large eggs. Then a small amount at a time, beating well between each addition, pour the eggs and 2tsp of vanilla extract into the butter mixture until combined.
  • Now, add the 340g of self-raising flour and 1.5tsp of baking powder and mix together until combined.
  • Pour the cake batter into the pre-lined baking tin and spread out evenly.
  • Place the baking tin into the oven and bake for 45-50 minutes, until a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and allow to cool fully in the tin.

How To Assemble & Decorate:

  • Now that the cake is cool, it’s time to assemble and decorate.
  • Using a cookie cutter the same size as your chosen desert glass (or use the desert glass itself) , cut out 7 rounds of cake and place the cake into the base of each glass.
  • Next, using an electric whisk or stand mixer, beat the 300g of unsalted butter for 2-3 minutes, until loosened and smooth.
  • Then, in small batches, beat in the 200g of icing sugar and 2tsp of vanilla bean paste until a silky smooth buttercream has formed.
  • Transfer the buttercream into a piping bag and snip the bottom of the piping bag off.
  • Pipe a decent amount of buttercream on top of the cake and using a knife, spread the buttercream around the edge and over the top of the cake, then level it off (the buttercream has to reach the top of the jar).
  • Now, in a shallow bowl, pour out the sprinkles.
  • Dunk the top of the glass into the bowl of sprinkles to create a dot crust.
  • Finally, repeat the steps above for each cake and serve.

That’s your Dot Cakes prepared, baked and decorated, ready for you to enjoy!
