Hello lovelies,
When it comes to limes, I’m definitely guilty of overlooking them. I very rarely use them in my bakes and I couldn’t tell you why as they are such a great addition to any desert.
We all know and love the citrusy flavour of lemons yet for some reason limes are incredibly underrated. Therefore, I wanted to make a bake which heroes limes and shows off their true potential.
That’s when I came across a recipe written by the incredibly talented Zoha, also known as ‘bake with zoha’ online. She had created the most incredible looking sweet treat which let lime be the shining star.
Inspired by the famous ‘Key Lime Pie’ this recipe features all the incredible flavours and textures of a key lime pie just in a bar form.
Obviously I had to recreate the recipe myself and let’s just say… it certainly doesn’t disappoint!

Ingredients You Need For The Base:
- 250g Of Digestive Biscuits
- 115g Of Unsalted Butter, Melted
Ingredients You Need For The Filling:
- 570g Of Condensed Milk
- Zest & Juice Of 4 Limes
- 2tsp Of Vanilla Extract
- 160g Of Sour Cream
- 2 Egg Yolks
Ingredients You Need For The Topping:
- 400ml Of Double Cream
How To Make The Biscuit Base:
- Firstly, gather together your equipment and ingredients, line the base and sides of a loose-bottomed, 9” square baking tin and preheat the oven to 190C / 170C Fan / Gas Mark 5.
- Secondly, in a food processor, blitz the 250g of digestive biscuits until they resemble crumbs (the biscuits can also be crushed in a sandwich bag with a rolling pin if you don’t have a food processor).
- Next, empty the biscuit crumbs into a large bowl and add the 115g of melted butter, using a wooden spoon, mix the butter into the biscuit crumbs until fully combined.
- Now, pour the butter biscuit mixture into the base of your pre-lined baking tin and using a spatula, press the mixture down firmly into the base of the tin, making sure it is levelled and evenly spread.
- Place into the oven for 10 minutes to bake.
- Once baked, remove from the oven and set to one side while you make the filling.
How To Make The Lime Filling:
- Lower the oven temperature to 180C / 160C Fan / Gas Mark 4.
- In a large bowl, whisk together the 570g of condensed milk, zest & juice of 4 limes, 2tsp of vanilla extract and 160g of sour cream until combined.
- Next, whisk in the 2 egg yolks until combined.
- Pour the lime filling over the top of the baked biscuit base (TIP: shake and tap the tin to get rid of any air bubbles).
- Place back into the oven and bake for 18-20 minutes, until the edges are set but the middle gently jiggles when shaken (it will continue to set as it cools).
- When baked, remove from the oven and allow to cool completely in the tin before transferring the tin into the fridge to set for a minimum of 4 hours.
How To Make The Topping:
- Once set, it’s time to add the topping.
- In a large bowl, using an electric whisk, whisk the 400ml of double cream until it reaches stiff peaks (be careful not to over mix).
- Slather the double cream over the top of the set lime filling (whilst still in the baking tin) and using a palette knife, smooth out the top evenly.
- Place back into the fridge to set for one hour.
- After an hour, take out the fridge and carefully remove from baking tin.
- Finally, cut into 16 squares and serve.
Notes:
- Keep these bars in an airtight container in the refrigerator for 3-4 days.
- You can use 2x 397g cans of condensed milk depending on how sweet you’d like the bake to be. For me personally, 1 and a half cans (570g) was enough but this can be adjusted.








I must say this about every single bake I do but I absolutely love the simplicity of this recipe. With only 9 ingredients, these bars are beginner friendly and will leave you wanting more – that’s a promise.
This is the perfect treat to hero limes and my word, do they shine in this recipe. They are the main focus and I’m absolutely obsessed! It’s certainly got me wanting to explore more with limes in the future.
