Prosecco Cupcakes Recipe!

Hello lovelies,

A huge Happy New Year to you all! Feels weird saying that being that we’re now in February. Where on earth is the time going?… it’s utter madness! 

Anywho, welcome back! it’s been a hot minute since I posted. I decided to take a little break over Christmas and throughout January to really knuckle down and get inspired for the new year ahead.

But, I’m back now and of course, in true fashion, we’re kicking the year off with a bang!

If you’ve got an occasion/celebration coming up, whether it’s new year, valentine’s day, galentines, a birthday, an anniversary, a party or gathering of some sort or anything in between, your going to want to save todays recipe. These are my prosecco cupcakes which are the perfect recipe to bake for your loved ones.

Now if you’ve been around here a while, you’ll have noticed I don’t use alcohol in any of my bakes. I’m someone who personally doesn’t like any type of alcohol and it can interact badly with some of my medications so I tend to stay well away.

With that being said, I know many of you reading this recipe today will enjoy a cheeky prosecco, especially when celebrating something like new year, an anniversary, birthdays etc, so it only felt right to create something utterly delicious, using a well loved wine like prosecco for you all.

I’ve got to say, as a non-drinker who tried these Prosecco cupcakes as my first ever bake with alcohol, I actually really enjoyed them! The prosecco adds the perfect amount of flavour to these simple vanilla cupcakes to really take it to the next level. It’s unlike any cupcake I’ve had / made before, but that’s the beauty of trying new things… right?

Ingredients You Need For The Cupcakes: 

  • 226g Of Butter / Stork 
  • 226g Of Caster Sugar 
  • 4 Large Eggs
  • 226g Of Self-Raising Flour 
  • 1tsp Of Baking Powder 
  • 60ml Of Prosecco 

Ingredients You Need For The Buttercream:

  • 250g Of Unsalted Butter 
  • 400g Of Icing Sugar 
  • 1tsp Of Vanilla Bean Paste / Extract
  • 2tbsp Of Prosecco

How To Make The Cupcakes: 

  • Firstly, gather together your equipment and ingredients, line a 12 hole cupcake tin with cupcake cases and preheat the oven 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, using an electric whisk, beat together the 226g of butter with 226g of caster sugar until light and fluffy.
  • Next, one at a time, beating well between each addition, beat in the 4 large eggs and 60ml of prosecco.
  • Now, mix in the 226g of self-raising flour and 1tsp of baking powder until fully combined.
  • Divide the cake mixture between the 12 cupcake cases.
  • Place into the oven for 15 minutes, until lightly golden and a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and leave to cool in the cupcake tin for 5 minutes before transferring onto a wire rack to cool completely.

How To Make The Buttercream: 

  • Now that the cupcakes have cooled, it’s time to make the buttercream.
  • In a large bowl, using an electric whisk, beat the 250g of unsalted butter until loosened.
  • In two/three additions, beating well between each addition, beat in the 400g of icing sugar, 1st of vanilla extract and 2tbsp of prosecco until a buttercream has formed.

How To Decorate: 

  • Transfer the buttercream into a piping bag with a 2D nozzle attached and pipe the buttercream onto each cupcake.
  • Finally, top with some cupcake toppers and a pipette filled with prosecco. 

That’s your Prosecco Cupcakes prepared, baked and decorated, ready for you to enjoy!


Notes: 

  • Store these cupcakes in an airtight container at room temperature for up to 4 days. 
  • I used a rosé prosecco from Asda but any type of sparkling wine or champagne will work for these cupcakes.
