Celebrations Cookie Bar Recipe | Christmas Bakes 2024!

I don’t know about you but every year after the mayhem of the christmas festivities, I’m always left with a box of chocolates or two which I never really know what to do with.

Now usually, we end up throwing them away (as everyone is sick of chocolate by this point) but it wasn’t until I saw the queen of baking herself, Ms Jane Patisserie’s recipe on leftover chocolate box cookie bars that I decided to make good use of them and make them into a yummy sweet treat for all to enjoy!

And boy, they did not disappoint.

This is actually the second year of making these leftover chocolate cookie bars and the more I play around with them, the more I fall in love. Therefore, it was only right that I share the recipe with you guys, so you too, can have this festive delight tingle your tastebuds.

Like I say, I can’t take credit for today’s recipe, this is all Jane’s incredible work! This recipe is utter genius if you ask me…

Ingredients You Need For The Celebrations Cookie Bar:

  • 275g Of Plain Flour
  • 1tsp Of Bicarbonate Of Soda
  • 1tbsp Of Cornflour
  • 115g Of Unsalted Butter
  • 55g Of Granulated Sugar
  • 135g Of Light Brown Sugar
  • 1 Medium Egg
  • 2tsp Of Vanilla Bean Paste / Extract
  • 150g Of Milk Chocolate Chips
  • 300g Of Celebration Chocolates

How To Make The Celebration Cookie Bar:

  • Firstly, gather together your equipment and ingredients, line a 9” loose-bottomed square baking tin with parchment paper and preheat the oven to 190C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, whisk together the 275g of plain flour, 1tsp of bicarbonate of soda and 1tbsp of cornflour until combined, then set to one side.
  • Next, in a microwavable bowl, add the 115g of unsalted butter, place the bowl into the microwave and in 20 second blasts, blast the butter until fully melted.
  • When melted, pour the butter into a large mixing bowl and whisk together with the 55g of granulated sugar and 135g of light brown sugar until the sugar starts to dissolve and the mixture is smooth.
  • Now, whisk in the 1 medium egg and 2tsp of vanilla extract until smooth.
  • Add the dry ingredients and the 150g of milk chocolate chips into the wet ingredients and mix together until a thick cookie dough forms.
  • Fold the 300-400g of celebration chocolates through the cookie dough the best you can until evenly distributed (I didn’t chop my celebrations up, I left them whole).
  • Gently press the cookie dough into the bottom of the prepared baking tin.
  • Place the baking tin into the oven and bake for 18-22 minutes, until the top of the cookie bar looks ‘dry’.
  • Once baked, remove from the oven and allow to cool in the tin for 10-20 minutes before removing from the tin and placing on a wire rack to cool completely.
  • Finally, when the cookie bar has cooled completely, cut into 16 squares and serve!

That’s your Celebrations Cookie Bar prepared, baked and cut, ready for you to enjoy!


Notes:

  • These cookie bars can be stored in an airtight container for up to 5 days.
  • If you don’t like celebrations and would prefer to use heroes, quality street, roses etc go ahead, they will taste just as yummy. If you do use a different box of chocolates and they have a soft centre, i would recommend freezing them before folding into the cookie bar dough.
  • You can use white or dark chocolate chips instead of / alongside the milk chocolate chips – it will be super yummy.

As I mentioned above, you could use any leftover christmas chocolates for this recipe, the options are endless. Me personally, I loved the outcome of my celebrations cookie bars the most but roses, quality street, heroes etc, will taste just as delicious.

I absolutely adore this recipe as there’s nothing I hate more than being wasteful with food! I know just how lucky I am to have an endless supply of food at christmas when there’s so many others around the world less fortunate, so finding this recipe by Jane has completely changed the game for me with the leftover christmas chocolate.
