Apple Caramel Cookies Recipe!

Hello lovelies,

You didn’t honestly think that I’d go through autumn without a cookie recipe, did you?

In my humble opinion, nothing in this world beats an autumnal flavoured cookie. It’s the best of the best and every single year, I get excited to create a new batch.

Whilst scrolling through Pinterest for inspiration one night, I came across a recipe written by the incredibly talented Chahinez, also known as ‘Lifestyle Of A Foodie’ online, which automatically got me excited.

The picture alone had me drooling but when I saw that this was an Apple Caramel Cookie, I was hooked. This in turn, had me inspired and it only felt right that I created a batch for myself, with a few little tweaks to suit my preferred preferences and damn, was it sensational.

It’s everything autumn is about. Spiced apple cookies with a creamy cream cheese frosting, topped with a drizzle of caramel, a cinnamon spiced crumb and fresh apple pieces – honestly if that description doesn’t have you dying to try these, I don’t know what will.

All my loved ones who tried these, said they were obsessed so, I think it’s fair to say that these are an absolute must try!

Ingredients You Need For The Cookies:

  • 113g Of Unsalted Butter
  • 150g Of Granulated Sugar
  • 55g Of Light Brown Sugar
  • 1 Large Egg
  • 2tbsp Of Apple Juice
  • 2tsp Of Vanilla Bean Paste / Extract
  • 250g Of Plain Flour
  • 1/2tsp Of Ground Sweet Cinnamon
  • 1/4tsp Of Ground Nutmeg
  • 1/4tsp Of Ground Ginger
  • 1/4tsp Of Ground Allspice
  • 3/4tsp Of Bicarbonate Of Soda
  • 1/4tsp Of Baking Powder

Ingredients You Need For The Cream Cheese Frosting:

  • 140g Of Full Fat Cream Cheese
  • 55g Of Unsalted Butter
  • 2tsp Of Vanilla Bean Paste / Extract
  • 100g Of Icing Sugar

Ingredients You Need For The Streusel:

  • 70g Of Light Brown Sugar
  • 2tsp Of Ground Sweet Cinnamon
  • 60g Of Unsalted Butter
  • 100g Of Plain Flour

Ingredients You Need For Decoration:

  • 1 Apple, Chopped Into Small Pieces
  • 30g Of Carnation Caramel Sauce

How To Make The Streusel:

  • Firstly, gather together your equipment and ingredients, line two baking trays with parchment paper and preheat the oven to 200C / 180C Fan / Gas Mark 4.
  • Secondly, in a small bowl, mix together the 70g of light brown sugar and 2tsp of ground sweet cinnamon.
  • Next, add in the 60g of melted unsalted butter and mix together until combined.
  • Add 100g of plain flour and using a fork, gently mix until crumbs form (don’t over mix as it will turn into a paste. If this does happen, I’d recommend adding more flour until it turns into crumbs).
  • Then, set to one side.

How To Make The Cookies:

  • Next, in a large bowl, using a stand or electric mixer, cream together the 113g of unsalted butter with the 150g of granulated sugar and 55g of light brown sugar until light and fluffy.
  • Beat in the 1 large egg, 2tsp of apple juice and 2tsp of vanilla extract until combined.
  • Gently mix the 250g of plain flour, 1/2tsp of ground sweet cinnamon, 1/4tsp of ground nutmeg, 1/4tsp of ground ginger, 1/4tsp of ground allspice, 3/4tsp of bicarbonate of soda and 1/4tsp of baking powder into the wet ingredients until all the dry ingredients are fully mixed in.
  • Using a cookie scoop, scoop out 12 equally sized cookie balls and place them onto the prepared baking tray.
  • Place the baking trays into the oven and bake for 12 minutes, until cooked through.
  • Once baked, remove from the oven and allow to cool on a baking tray for 5 minutes before transferring to a wire rack to cool completely.

How To Make The Cream Cheese Frosting:

  • When the cookies have cooled, it’s time to make the cream cheese frosting.
  • In a mixing bowl, beat together the 140g of cream cheese with the 55g of unsalted butter until smooth and creamy.
  • Next, add in 100g of icing sugar and 2tsp of vanilla extract and whip until light and fluffy.
  • Frost the completely cooled cookies with the cream cheese frosting.

How To Decorate:

  • Drizzle the 30g of carnation caramel sauce over the top of the cream cheese frosting.
  • Finally, top with the chopped apple and a sprinkling of the streusel.

That’s your Apple Caramel Cookies prepared, baked, frosted and decorated, ready for you to enjoy!


Notes:

  • Store these cookies in an airtight container, at room temperature for up to 4 days.
  • You don’t have to use carnation caramel, you can use homemade caramel.

I’m salivating whilst writing this, I’m sorry to keep saying it but I’m obsessed.

I’m not sure if you’ve seen the massive viral trend online about the famous Crumbl Cookies in America? Well, these are inspired by a Crumbl Cookie which has me even more excited to try the real thing one day as these inspired cookies are incredible, so I can only imagine the original is too.
