Pumpkin is such a versatile food, it works with alot of different ingredients to make the most delicious tasting sweet treats.
Now, a couple of weeks ago you may remember I shared my love for the pairing of pumpkin and cream cheese. In my opinion, it’s a match made in heaven BUT if there’s one ingredient I think pumpkin also pairs perfectly with, it’s white chocolate.
Damn, is it sensational! Therefore, I decided to pair pumpkin and white chocolate together today to create a heavenly blondie.
I find blondies a real comfort sweet treat and there’s nothing you could want more during the colder months than comfort food.

Ingredients You Need For The Pumpkin Blondies:
- 227g Of Unsalted Butter
- 375g Of Dark Brown Sugar
- 1 Large Egg
- 160g Of Canned Pumpkin Purée
- 2tsp Of Vanilla Bean Paste / Extract
- 330g Of Plain Flour
- 1tbsp Of Pumpkin Pie Spice
- 1tsp Of Bicarbonate Of Soda
- 350g Of White Chocolate Chips
How To Make The Pumpkin Blondies:
- Firstly, gather together your equipment and ingredients, line a 9×13” baking tin with parchment paper and preheat the oven to 200C / 180C Fan / Gas Mark 5.
- Secondly, in a small saucepan, over a low heat, melt the 227g of unsalted butter. Once melted, turn the heat up to a medium and cook the butter until it ‘browns’. When at the right stage of browning, there will be brown bits at the bottom of the saucepan, the butter will go mostly quiet and you’ll smell a nutty aroma.
- When the butter has browned, remove from the heat and set to one side to cool slightly.
- Next, in a medium sized mixing bowl, whisk together the 330g of plain flour, 1tbsp of pumpkin pie spice and 1tsp of bicarbonate of soda. Then, set to one side.
- Once the butter has cooled slightly (it’s okay if the butter is warm, but just make sure it’s not too hot as it will cook the egg), pour into a large mixing bowl alongside the 375g of brown sugar, 1 large egg, 160g of canned pumpkin and 2tsp of vanilla extract, and whisk together until fully combined and smooth.
- Now, fold the dry ingredients into the wet and using with a rubber spatula, until incorporated.
- Then, fold in the 350g of white chocolate chips until evenly distributed throughout the batter.
- Pour the blondie batter into the prepared baking tin and using a spatula, spread out evenly.
- Place the baking tin into the oven and bake for 35 minutes or until a skewer inserted into the centre comes out mostly clean (a few moist crumbs is fine).
- Once baked, remove from the oven and allow to cool completely in the baking tin before carefully removing.
- Finally, cut the Blondies into squares and serve.
That’s your Pumpkin Spice Blondies prepared, baked and cooled, ready for you to enjoy.
Notes:
- Store in an airtight container at room temperature for up to 1 week.
- These can be wrapped individually and placed into the freezer for up to 2 months. When you want to eat them, remove from the freezer the night before and thaw in the fridge overnight and heat up if needed.
