I cannot believe that in all the years I’ve been making, creating, writing and sharing my bakes with you guys, that I’ve never shared a apple turnover recipe. Quite frankly, that’s a crime and I can only apologies.
Apple turnovers are the most incredible autumnal bake. With thin flaky pastry and a perfectly spiced apple filling – you physically cannot go wrong with these.
What I love about apple turnovers is that they are such a simple bake, yet you get ultimate satisfaction. You get that warm, homely, wholesome feeling inside with every single bite which if we’re being honest, is all anyone could want from a bake, right?

Ingredients You Need For The Apple Turnovers:
- 2x Ready-To-Roll Puff Pastries
- 1 Egg
Ingredients You Need For The Apple Turnover Filling:
- 5 Granny Smith Apples, Peeled & Diced
- 2tsp Of Cornflour
- 2tsp Of Cinnamon
- 100g Of Granulated Sugar
- 1tsp Of Vanilla Bean Paste / Extract
How To Make The Apple Turnover Filling:
- Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper.
- Secondly, in a large saucepan over a medium / medium-high heat add the 5 peeled and diced Granny Smith apples and toss them in the 2tsp of cornflour, 2tsp of cinnamon, 100g of granulated sugar and 1tsp of vanilla extract.
- Cook the apples, whilst stirring regularly, for 5 minutes (at this stage, the apples should be softened but not mushy or loosing shape. There should also be some but not too much caramel).
- Spread the apple turnover filling onto a plate and allow it to fully cool.
How To Make The Apple Turnovers:
- Once the apple filling has cooled, it’s time to prepare the pastry.
- Working one pastry sheet at a time (they should be barely thawed), cut the pastry sheet into four 12.5cm squares.
- Brush two sides of the pastry square with a beaten egg and then, pile the cooled apple filling onto the egg brushed side.
- (I would always avoid using the caramel sauce from the apples as it can soak the pastry and if the pastry isn’t sealed properly, it will leak out the edges).
- Fold the other side of the pastry square over the filling, into a triangle shape and using a fork dipped in flour, seal the pastry.
- Transfer the turnovers onto the prepared baking tray and place into the refrigerator for 20 minutes to chill.
- Whilst the turnover is in the fridge, preheat the oven to 200C / 180C Fan / Gas Mark 5.
- Once the 20 minutes is up, remove from the fridge and slide the parchment paper which the turnovers is on onto a separate large baking tray (this helps avoid the turnover from not cooking properly).
- Brush the turnovers with the egg wash, stab three times with a knife on the top to allow the steam to escape and sprinkle some demerara sugar over the top of the egg wash.
- Place into the oven and cook for 25-30 minutes, until golden brown.
- Finally, remove from the oven and allow to cool slightly before serving to your loved ones.
That’s your Apple Turnovers prepared, chilled and baked, ready for you to enjoy!
Notes:
- These can be stored at room temperature, in an airtight container for up to 3 days.
- I would always recommend to re-heat the turnovers for the freshest taste.
- I would recommend using Granny Smith apples as they hold their shape well unlike other apples which can go to mush very quickly.
- I recommend cooling the apple filling on a plate as apple tends to sweat in small bowls and that therefore will cause it to drop too much liquid and become dry.
- I love to pair these warm turnovers with either custard or fresh whipped cream.

Im sure you’ve noticed by now that this is a ridiculously quick & easy recipe to make & bake. You physically can’t go wrong with today’s recipe, in my opinion it’s very beginner friendly and the outcome is guaranteed to be a crowd pleaser.
