Peach Shortcakes Recipe!

Hello lovelies,

I have been seeing recipes for peach shortcakes all over my social media pages.

They have definitely been making the rounds online recently and you know me guys, if I see something that looks utterly delicious, that I haven’t attempted before AND are popular, you best believe I’m on Asda buying the ingredients to make a batch of my own… ASAP!

And let’s just say, these peach shortcakes did not disappoint.

I don’t know about you, but I always believed a shortcake wasn’t much different from a scone but after educating myself, I soon realised that wasn’t the case.

For those of you who like myself, didn’t know the difference, here’s a little info I got from google: ‘Whereas a scone has a shorter, more biscuity crumb, a shortcake is almost half cake and half scone’.

Therefore, upon tasting, it is very obvious they aren’t the same but I must say, these shortcakes are just as delicious as a freshly made scone. I absolutely love the addition of cream and peaches, it gives it a fresh and sweet taste which is to die for!

Ingredients You Need For The Shortcakes:

  • 500g Of Plain Flour
  • 4tsp Of Baking Powder
  • 2tbsp Of Granulated Sugar
  • 316ml Of Buttermilk
  • 2 Large Eggs
  • 226g Of Unsalted Butter, Melted & Cooled

Ingredients You Need For The Filling:

  • 7 Ripe Peaches, Cut Into Slices
  • 200ml Of Double Cream

How To Make The Shortcakes:

  • Firstly, gather together your equipment and ingredients, line two baking trays with parchment paper and preheat the oven to 220C / 200C Fan / Gas Mark 7.
  • Secondly, in a large bowl, whisk together the 500g of plain flour, 4tsp of baking powder and 2tbsp of granulated sugar until combined, then set to one side.
  • Now, in a separate large bowl, using a whisk, whisk together the 316ml of buttermilk, 2 large eggs and 226g of melted & cooled unsalted butter until combined.
  • Next, pour the wet ingredients into the large bowl with the dry ingredients and using a fork, mix together until just combined.
  • Spacing 2” apart and putting 6 mounds per tray, using a tablespoon, spoon heaped mounds of dough onto the pre-lined baking tray. I made 12 heaped mounds all together.
  • Sprinkle a little granulated sugar over the top of each mound.
  • Place into the oven and bake for 12-15 minutes, until the shortcakes are lightly golden in colour (TIP: You do NOT want to over bake these shortcakes as they will become very dry, so I’d recommend watching them like a hawk).
  • Once baked, remove from the oven and leave to cool for 10 minutes on the baking trays before transferring to a wire rack to cool fully.

How To Make The Filling & Assemble:

  • Whilst the shortcakes are cooling, it’s time to make the filling.
  • In a large bowl, using an electric whisk, whisk the 150ml of double cream until thickened. Set to one side.
  • In a separate medium sized bowl, slice the peaches.
  • When the shortcakes have fully cooled, using a sharp knife, carefully cut each of the shortcakes in half.
  • Now, on the bottom half of each shortcake, add 5-6 slices of peach. Then, using a tbsp, dollop some of the thickened double cream on top of the peaches.
  • Finally, add the remaining half of the shortcakes on top of the cream and lightly press down.

That’s your Peach Shortcakes prepared, baked, filled and assembled, ready for you to enjoy!


Notes:

  • If you don’t like peaches, you can use other fruit instead. I know strawberries or any kind of berry is delicious with these shortcakes.
  • These shortcakes can be kept in the fridge for 1-2 days, I’d personally recommend eating these on the day of making for the freshest taste.

You can’t tell me these don’t look delicious? I could easily demolish these over and over again!

Such a simple recipe to make, bake and fill and it has such a delicious outcome every damn time. Super fresh and sweet, perfect to share with loved ones this summer.
