Very Berry Brownie Pizza Recipe!

When scrolling through social media recently, I’ve been seeing a lot of people creating these ‘sweet pizzas’.

I know people having been making them for years now, it’s not just a new thing to hit the market but id definitely say I’ve had an influx of people sharing their versions online recently and BOY, do they look good.

You all know me well enough by now to know my love for pizza, it’s my favourite thing in the world but I have to admit… I’ve never EVER tried a sweet pizza before. Honestly, I’ve always been slightly put off the idea of trying one, I couldn’t ever imagine it tasting good, therefore, I’m a sweet pizza virgin.

You’ll also know me well enough by now to know that I’m not one to let a trend pass, so rather than going out and buying a ‘sweet pizza’, I thought I’d jump on the bandwagon and make my own. Only, mines got a twist.

Rather than using a proper pizza dough, I decided to make my pizza base into a brownie and let me just say, without sounding to big headed, it was absolutely blooming sensational.

The triple chocolate, fudgy brownie pizza base with the fresh and fruity pizza toppings – a recipe of complete perfection!

Ingredients You Need For The Brownie Base:

  • 200g Of 70% Cocoa Dark Chocolate
  • 200g Of Unsalted Butter
  • 3 Large Eggs
  • 275g Of Caster Sugar
  • 100g Of Plain Flour
  • 50g Of Cocoa Powder
  • 100g Of Milk Chocolate Chips
  • 100g Of Dark Chocolate Chips
  • 100g Of White Chocolate Chips

Ingredients You Need For The Toppings:

  • 150ml Of Double Cream
  • 1 Small Punnet Of Fresh Blueberries
  • 1 Small Punnet Of Fresh Raspberries
  • 1 Small Punnet Of Fresh Strawberries

How To Make The Brownie Base:

  • Firstly, gather together your equipment and ingredients, line a 9” loose bottomed, round baking tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 5.
  • Secondly, in a microwavable bowl, add both the 200g of dark chocolate and 200g of unsalted butter. Place the bowl into the microwave and in 20 second blasts, blast the butter/chocolate until fully melted.
    When both the ingredients have melted, remove from the microwave and place to one side to cool to room temperature.
  • Now, in a large bowl, using an electric whisk, whisk together the 3 large eggs with the 275g of caster sugar for a few minutes, until the colour has turned pale, is a mousse like texture and the volume has doubled in size (TIP: you will know it’s done when you lift the whisk up out from the mixture and it should leave a trail for a couple of seconds, before disappearing).
  • Once whisked, pour the cooled melted chocolate/butter mixture over the eggs and very carefully fold together (TIP: being careful and patient is crucial at this stage because you don’t want to knock the air out of the mixture).
  • When combined, sift in the 100g of plain flour and 50g of cocoa powder and carefully fold into the mixture.
  • Carefully fold in the 300g of chocolate chips.
  • Pour the brownie batter into the prepared baking tin and place into the oven to bake for 25-30 minutes, until there’s a slight wobble in the centre of the brownie and a skewer placed into the brownie comes out mostly clean.
  • Once baked, remove the brownies from the oven and allow to cool fully in the tin before transferring into the fridge to chill for 1-2 hours (this will give the brownie that fudgy texture).

How To Make The Topping:

  • When your brownie base has finished chilling, take out of the fridge and carefully remove from the baking tin.
  • Next, in a large bowl, using a stand or electric whisk, whisk the 150ml of double cream until thickened (TIP: watch the cream like a hawk when whisking as it can easily become over whipped).
  • Once whipped, using a palette knife, spread the whipped cream across the top of the brownie base, leaving a 1” boarder around the edge.
  • Then, dice your strawberries and half your raspberries.
  • Finally, sprinkle the berries over the top of the whipped cream.

That’s your Very Berry Brownie Pizza prepared, baked, chilled and decorated, ready for you to enjoy!


Notes:

  • What fruit you use on the brownie pizza is completely up to you. I stuck to the berries my family love but you could go totally wild with different fruits.
  • Due to the whipped cream topping, you must keep the brownies stored in the fridge for up to 4-5 days.

    This is such a great idea! I have not had brownie with fruit before, but the combo is brilliant. I love raspberries and chocolate together so I already know I will enjoy this.
