Extra Cheesy Cheese Scones Recipe!

It has been a hot minute since I last posted a savoury recipe so I thought it was about time I changed that.

Therefore, I’m back again today sharing with you the ultimate savoury snack – my extra cheesy cheese scones. Yup, they taste as good as they sound!

We all have those childhood memories of coming home from school and the whole house being filled with the incredible smell of something your mum/dad is making. One of those smell memories for me is cheese scones.

The smell of mature cheddar cheese being baked is a smell I physically can’t get enough of and the excitement that would fill my body when I found out it was cheese scone day is something I’ll never forget.

Now, I know we all say this but I genuinely hand on heart can say that nothing compares to my mums cheese scones. I’ve tried many over the years but nothing and I mean NOTHING comes close to how good my mums are. Period.

Back a few years ago I shared a cheese scone recipe which my mum had been using for lord knows how many years, BUT, since then, I’ve helped mum to make a few minor tweaks to her cheese scone recipe which have made the cheese scones go from blooming good to complete perfection.

And now, I finally feel it’s the right time to re-share our tweaked cheese scone recipe with you all. I can guarantee you now, you won’t be disappointed!

Ingredients You Need For The Cheese Scones:

  • 450g Of Self-Raising Flour
  • 2tsp Of Baking Powder
  • 3tbsp Of Mustard Powder
  • 110g Of Unsalted Butter, Chilled & Cut Into Cubes
  • 350g Of Grated Mature Cheddar Cheese
  • 200ml Of Semi-Skimmed Milk

How To Make The Cheese Scones:

  • Firstly, gather together your equipment and ingredients and preheat the oven to 200C / 180C Fan / Gas Mark 6, with two lined baking trays inside.
  • Secondly, sift the 450g of self-raising flour, 2tsp of baking powder and 3tbsp of mustard powder into a large mixing bowl and mix together until combined.
  • Add the 110g of chilled and cubed unsalted butter into the dry ingredients and using your fingertips, rub the butter into the dry ingredients until the mixture resembles bread crumbs.
  • Sprinkle 330g of the mature cheddar cheese into the bowl and rub together until evenly distributed (TIP: try not to mix too much as the heat from your hands may begin to melt the butter).
  • Now, make a well in the centre of the mixture and a little at a time, pour in the milk and mix together until a fairly soft but firm dough has been created (TIP: do not pour in all the milk at once as you may not need it all to create the right consistency).
  • On a lightly floured surface, roll out the dough to a 2-3cm thickness and using a medium cutter, cut out the scones and place onto the prepared & pre-heated baking trays (this mixture should roughly make 12 scones).
  • Glaze the scones with a little milk and sprinkle the remaining 20g of cheese between the top of each scone.
  • Place into the oven and bake for 15-20 minutes, until golden brown and cooked through.
  • Finally, once baked, remove from the oven and leave to cool on the baking trays for 10 minutes, before transferring to a wire rack to cool completely. Serve warm or cold with a decent slather of butter.

Notes:

  • If you keep in the fridge, in an airtight container or tightly wrapped, your cheese scones should roughly last 4-5 days. If you keep outside the fridge, in an airtight container or tightly wrapped, your scones should roughly last 2-3 days.

    These look delicious Elle! Cheese scones have been on my list of things to bake for awhile, and now I’ve got a great recipe too 🙂
