Spiced Caramel Mini Loaf Cakes Recipe!

Hello lovelies,

It’s been a hot minute since I got myself into the kitchen and using some winter spices!

I feel like I was getting withdrawal symptoms from the lack of spice in my life so it was time to spice things back up again and get indulging in a world of spicy goodness.

Now when I say spices, I don’t mean chilli, paprika etc, I mean the warm, hearty spices which go beautifully into our sweet bakes. Ginger, cinnamon, all spice, nutmeg – the works. These spices take a bake from good to unbelievably good. You can’t tell me otherwise.

And what better way to incorporate a bunch of spices into a bake, than putting them in a mini loaf cake. Quite frankly, there’s no better way. That’s a fact!

Spiced loaf with a vanilla buttercream and a delicious caramel drizzle – what more could you possibly ask for? Also, it’s quick, easy and I’ll say it again… blooming delicious!

Today’s recipe is actually inspired by an incredibly talented baker called Emma, also known as ‘She Can’t Eat What’ on her blog and socials.

I actually got to meet Emma a couple years back at a baking class I did and I fell in love with her recipes way back then. So when I saw her recipe pop up on my Pinterest recently, I instantly fell in love and knew I had to re-create it asap!

Ingredients You Need For The Loaf Cakes:

  • 150g Of Butter/Stork
  • 150g Of Light Brown Sugar
  • 3 Medium Eggs
  • 2tsp Of Vanilla Bean Paste / Extract
  • 150g Of Plain Flour
  • 2tsp Of Baking Powder
  • 1/2tsp Of Ground Cinnamon
  • 1/4tsp Of Ground Nutmeg
  • 1/4tsp Of All Spice

Ingredients You Need For The Buttercream:

  • 180g Of Unsalted Butter
  • 360g Of Icing Sugar
  • 2tsp Of Vanilla Bean Paste / Extract

Ingredients You Need For Decoration:

  • Carnation Drizzle Caramel
  • Chocolate Filled Balls

How To Make The Loaf Cakes:

  • Firstly, gather together your equipment and ingredients, grease the mini loaf tin/s well and preheat the oven to 200C / 180C Fan / Gas Mark 6.
  • Secondly, in a medium bowl, sift together the 150g of plain flour, 2tsp of baking powder, 1/2tsp of ground cinnamon, 1/4tsp of nutmeg and 1/4tsp of allspice, then set to one side.
  • Next, in a large bowl, using an electric whisk, beat together the 150g of butter with 150g of light brown sugar until light and fluffy.
  • One at a time, beating well between each addition, beat in the 3 medium eggs and 2tsp of vanilla bean paste.
  • Now, with a large metal spoon, fold the dry ingredients into the wet ingredients.
  • Evenly divide the cake batter between each of the mini loaf tins and level off with a spatula.
  • Place into oven and bake for 20-25 minutes, until a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and allow to cool in the tin for 10 minutes, before transferring onto a wire rack to cool completely.
  • Repeat the steps above until the cake batter is all used up.

How To Make The Buttercream:

  • Now that the mini loaf’s have been made and have cooled completely, it’s time to make the buttercream.
  • In a large bowl, using an electric whisk, beat the 180g of unsalted butter until loosened, light and fluffy.
  • In two/three additions, beating well between each addition, beat in the 360g of icing sugar and 2tsp of vanilla bean paste until the buttercream has formed.
  • Next, attach a Wilton 1A piping nozzle to a piping bag and transfer the buttercream into the piping bag.
  • Pipe the buttercream onto the mini loafs.

How To Decorate:

  • Lets decorate!
  • Pour the carnation drizzle caramel over the top of the buttercream.
  • Finally, add a handful of little choco balls onto the top of the loafs.

That’s your Spiced Caramel Mini Loaf Cakes prepared, baked and decorated, ready for you to enjoy!


Notes:


They may be small but they are mighty! Mighty fine that is. Utterly delicious, if I do say so myself.

I’m so happy with how these mini loafs turned out, they were ridiculously quick and easy to make and really fixed that spice craving.
