White Chocolate & Raspberry Cookie Recipe | Air Fryer Series!

Hello lovelies,

I think you’ll all have seen by now that air fryers have taken the world by storm, with a high percentage of people converting to only using an air fryer to cook their food.

I don’t know about you but myself and my family have been sucked in by the amazing reviews surrounding air fryers! It’s quick & easy to use, there’s no pre-heating and there is an argument that air fryers are cheaper to run than cookers so I can completely understand the hype surrounding these fryers right now.

I’ve only ever baked potato’s in my air fryer, I’ve not really adventured outside of that so seeing the online presence surrounding air fryers, I felt it was time to push the boat out. That was when i thought of an the idea… an Air Fryer Recipe Series shared here on my blog, in which I share all different kinds of sweet treats (with a few savoury thrown into the mix) which can obviously be made in an air fryer.

So, here I am today, sharing with you the first recipe in my new series! Ugh. These cookies are *chefs kiss*.

Fryer Time: 12-15 Minutes Per Batch

Overall Time: 1 Hour


Ingredients You Need:

  • 125g Of Unsalted Butter, Softened
  • 100g Of Light Brown Sugar
  • 75g Of White Granulated Sugar
  • 1 Egg
  • 2tsp Of Vanilla Extract
  • 300g Of Plain Flour
  • 1tbsp Of Cornflour
  • 1/2tsp Of Bicarbonate Of Soda
  • 200g Of White Chocolate Chips
  • 1 Packet Of Cake Angels, Raspberry & White Choc Chunks

How To Make Cookies:

  • Firstly, gather together your equipment and ingredients and line the base of your air fryer with parchment paper.
  • Secondly, in a large bowl, using an electric whisk, beat together the 125g of unsalted butter with 100g of light brown sugar and 75g of white granulated sugar until light and fluffy.
  • Next, beat in the egg and 2tsp of vanilla extract.
  • Add the 200g of white chocolate chips and the packet of raspberry and white chocolate chunks and fold through.
  • Now, add in the 300g of plain flour, 1tbsp of cornflour and 1/2tsp of bicarbonate of soda and beat together until a cookie dough forms.
  • Using a cookie scoop or your hands, take a small amount of dough and roll between the palm of your hands to create a ball. This dough should roughly make around 12-15 cookies depending on size.
  • Now, place two/three cookie dough balls into the pre-lined air fryer (I recommend two or three balls as the dough does slightly spread and you don’t want them spreading into one another).
  • Bake for 12-15 minutes at 160C until golden.
  • Once baked, remove the air fryer draw, place onto the side and allow the cookies to cool in the draw for a few minutes before removing and placing onto a wire rack to continue cooling.
  • Finally, repeat the steps above for each batch of cookies.

That’s your White Chocolate & Raspberry Cookies prepared, air fried and ready for you to enjoy!

Damn, these are just delicious!

If you don’t have an air fryer but still want to make these cookies, that’s okay! place the cookie dough balls onto a lined baking tray and place into the oven at 180C /160C Fan / Gas Mark 4 for 10 minutes.
