I tell you what, we are jumping from occasion to occasion here on the blog. From christmas to valentines and now valentines to pancake day – it’s all coming round ridiculously quick, isn’t it?
I, of course, couldn’t let pancake day slip by without sharing a couple of recipes at the very least!
I don’t know about you but I blooming LOVE pancake day. To be completely honest, i very rarely have pancakes other than on pancake day (well, since having the blog I have them a couple of times through February due to creating these recipes etc), so it’s always such a lovely treat and something I look forward to after Christmas.
I’m someone whose always up for trying different types of pancakes, I love creating new recipes and truthfully, I am yet to find a pancake I haven’t enjoyed.
One pancake I’ve seen making the rounds on social media recently (well, it’s actually been going round for years but I’ve seen it many of times through the last month) is buttermilk pancakes, I’ve never tried them myself so I knew it was time to give them a taste.
I think the fact I’m sharing this recipe with you today is enough clarification on how they went down. If you hadn’t guessed… they went just amazingly!
So, if these have taken your fancy, get your pancake pan and your impressive flipping skills at the ready and let’s get making…

Prep Time: 10 Minutes
Cook Time: 1-2 Minutes Each Side
Overall Time: Half Hour
Ingredients You Need For Pancake:
- 290g Of Plain Flour
- 2tsp Of Bicarbonate Of Soda
- 1tsp Of Baking Powder
- 2tbsp Of Caster Sugar
- 2 Large Eggs
- 3tsp Of Vanilla Extract
- 240ml Of Buttermilk
- 80ml Of Milk
Additional Ingredients For Serving:
- 20g Of Chocolate Hazelnut Spread, Slightly Softened
- Punnet Of Fresh Raspberries & Blueberries
How To Make Buttermilk Pancakes:
- Firstly, gather together your equipment and ingredients.
- Secondly, in a large bowl, mix together the 290g of plain flour, 2tsp of bicarbonate of soda, 1tsp of baking powder and 2tbsp of caster sugar until combined.
- Next, in a separate large bowl, using a whisk, whisk together the 2 large eggs, 3tsp of vanilla extract, 240ml of buttermilk and 80ml of milk.
- Now, as you slowly pour the buttermilk mixture into the dry ingredients bowl, continue to whisk and remain whisking until the wet ingredients are fully combined with the dry. At this point, the pancake batter should be completely smooth and slightly thicker in consistency.
- Grab your frying pan, place onto a hob over a medium high heat.
- Spray your pan with a decent amount of low cal oil until coated (this is so the pancake doesn’t stick. I’d recommend doing this even if your using a non-stick pan).
- Pour 2tbsp of pancake batter into your frying pan (TIP: if the batter isn’t spreading how you’d like, use the back of a metal spoon to spread out to your preferred size).
- Cook for around 1 and a half minutes on one side, then flip over and cook the other side for another minute. The pancakes should be beautifully golden either side.
- TIP: during this time, keep an eye on your heat as the oil will also begin heating making it quicker for the pancake to burn. Adjust the heat however you need.
- Once the pancake is fully cooked, place onto a plate and continue to do the steps above until all the pancake batter is used up.
- Finally, serve a stack of pancakes hot with a nice dollop of softened nutella and fresh fruit.
That’s your Buttermilk Pancakes prepared, cooked, flipped and ready for you to enjoy!

I use to be an all out thin pancake / crepe gal BUT since making American pancakes a couple of years ago, I defiantly think I’m swaying more towards a thick, fluffy pancake being my favourite. I never thought I’d see the day.
These really are sweet perfection! Light, fluffy and thick – is that not the sound of a good pancake?
