White Chocolate & Jammie Dodger Blondies Recipe!

If your a foodie / love baking like myself, then Instagram is the place to be! I’ve found myself following more and more Instagram accounts that do baking and share videos of them decorating cakes and honestly, I get most my inspiration from them.

I must spend the majority of my day, indulged in Instagram videos building a list of different bakes I’d like to do myself. Today’s blogpost is actually inspired by a friend of mine @itslittlelauren { http://www.itslittlelauren.co.uk }.

Blondies / brownies are one of my favourite things to bake, not only are they quick but there also incredibly easy. They are one of those bakes that you can literally add any flavours to and it’ll taste like a dream!

So for today’s bake, I’ve made Jamie Dodger Blondies and let me tell you, these went down an absolute treat! So, if you’d like to get baking these yourself, then keep on reading below…

Ingredients You Need:

  • 250g Of Unsalted Butter
  • 250g Of Caster Sugar
  • 3 Large Eggs
  • 175g Of Plain Flour
  • 1 Teaspoon Of Vanilla Extract
  • Bag Of White Choc Chips

Ingredients You Need For Decorating The Blondies:

  • White Chocolate, For Melting
  • Strawberry Jam
  • Jammie Dodgers

 

How To Make Jammie Dodger Blondies:

  • Firstly, gather together all your equipment, ingredients, line a square baking tin of your choice and preheat your oven to 180 degrees, Gas Mark 4.
  • Secondly, using an electric whisk or stand mixer, whisk together your 3 large eggs, 250g of caster sugar and vanilla extract for a few minutes until the colour of the mixture turns pale, very mousse like and has doubled the original volume of the amount of eggs & sugar. TIP: you will know when it’s done when you lift the whisk up out the mixture, it should trail for a few second before disappearing.
  • Next, melt the 250g of unsalted butter carefully in the microwave and stir until smooth.
  • Whilst whisking the mixture, beat in the smooth melted butter a little at a time, making sure each time you add the butter, it’s completely mixed in before adding more.
  • Once the butter has been fully added and mixed in, sift the 175g of plain flour slowly and fold the mixture together.
  • Then, add the white choc chips into the mix and fold in again.
  • Now that’s done, pour the mixture into the baking tin and bake in the oven for 35-40 minutes or until a skewer comes back out clean, that’s when you’ll know it’s baked through. Leave the Blondies in the tin to cool down completely.

Decorating Your Blondies:

  • Firstly, melt your white chocolate in the microwave, until it’s completely runny. Once melted, pour over the top of Blondies. TIP: make sure it isn’t smeared to thin, the thicker the chocolate on top, the better.
  • Once you’ve melted your chocolate and smoothed it out, melt your jam. Now, you have to be so very careful when melting jam as it burns very easily.
  • Now you’ve melted your jam, drizzle it on top of your melted white chocolate and with a cocktail stick, swirl the jam into the white chocolate to give it a marbled effect.
  • Whilst the white chocolate and jam aren’t set, add some Jammie dodgers on top and push down. Once it’s set, the Jammie dodgers will stay in place.
  • And that’s your Jammie Dodger Blondies, prepared, baked and decorated, ready to be eaten!
