No-Bake Old School Bars Recipe!

With the ‘old school cakes’ being at the height of all trends at the moment and seeing so many incredible bakers take the ‘old school cake’ and creating the most magical twists on it, it only felt right that I join in on the madness of it all.

We all know I get serious FOMO when it comes to things like this, I can’t help myself but jump on a trend.

If you’ve been around here a while, you’ll know that Ive been sharing with you my ‘no-bake bar’ series. Therefore, it felt fitting to take the ‘old school cake’ and transform it into a ‘no-bake’ bar.

With that being said, I can’t take full credit for today’s bars as they are inspired by the amazing Chloe, known online as ‘biteofthebakes’. Chloe shared her version of these ‘no-bake school bars’ on instagram recently and I immediately knew I had to add it to my series.

And boy, what a scrum-diddly-umptious bar this is!

Not only is it damn right delicious in its flavour but it’s super quick to throw together, any one of any skill set can make these with ease, there’s absolutely no baking involved and best of all, it uses 5… yes 5! ingredients only – tell me honestly, what’s not to love?

Servings: 9 Large Bars Or 16 Smaller Bars

Prep Time: 15 Minutes

Chill Time: 4-5 Hours

Overall Time: 5Hours 15Minutes


Ingredients You Need For The Base:

  • 400g Of Digestive Biscuits
  • 100g Of Unsalted Butter, Melted
  • 397g (1 Tin) Of Condensed Milk

Ingredients You Need For The Topping:

  • 500g Of Icing Sugar
  • 4-6tbsp Of Water
  • Dot Sprinkles

How To Make The Base:

  • Firstly, gather together your equipment and ingredients and line a 9” loose-bottomed, square baking tin with parchment paper. 
  • Secondly, in a food processor (or a ziplock bag with a rolling pin), crush up the 400g of digestive biscuits into crumbs. 
  • Transfer the biscuit crumbs into a mixing bowl. Add the 100g of melted unsalted butter and 397g of condensed milk and mix together until fully combined. 
  • Now, press the biscuit mixture evenly into the base of prepared baking tin, then set to one side.

How To Make The Topping:

  • Next, in a large mixing bowl, add the 500g of icing sugar.
  • A tablespoon at a time and mixing well between each addition, add the 4-6tbsp of water. You are looking for the icing to be a very thick, paste-like consistency (which is why I recommend adding a tablespoon at a time as you don’t want the icing to be too runny as it won’t set).
  • Dollop the thick icing onto the biscuit base and using a palette knife, spread the icing out to all four corners evenly.
  • Now, cover the entire top of the icing with the dot sprinkles.
  • Place the finished bars into the fridge to set for a minimum of 4 hours.
  • Finally, once the icing has set, carefully remove from the baking tin and cut into 9-16 bars, then serve.

That’s your No-Bake Old School Bars prepared, chilled and cut, ready for you to enjoy!


Notes:

  • Store in an airtight container in the refrigerator for 3-5 days.
  • After 5 hours of chilling, if you still feel the icing isn’t 100% set, place the baking tin into the freezer for 1 hour. This will help the icing to hold its shape and make for a cleaner cut.

As a lover of the ‘old school cake’, I can honestly say that these bars really do hero all the best things about the original: from the simplicity of the flavours, to the perfectly thick layer of icing, to the hundreds of sprinkles.

I mean, I knew these bars would be sensational, one) because they’re inspired by an incredibly talented baker whose bakes I adore and two) because it’s old school cake, of course it would be yummy BUT even I have to give credit to the fact these exceeded all my expectations and have me completely and utterly hooked!

They really do bring the nostalgia with every bite and I can guarantee you ‘old school cake’ lovers out there will be just as obsessed, if not more than me.
