The VIRAL Mini Egg Cornflake Crunch Cake Recipe!

If you’re a social media user (instagram and facebook specifically), it’s likely you’d of seen pictures or videos of the ‘Mini Egg Cornflake Crunch Cake’ which has gone crazy viral.

Originally shared by the unbelievably talented baker @rubybarneybritton, this cake has quite literally taken the baking world by storm and has been the one bake I’ve seen bakeries / bakers recreate and share repeatedly for the last month.

I can see why as every picture/video I’ve seen/watched of the cake being made has honestly had my mouth salivating.

It’s a rich, gooey chocolate fudge cake base which is topped with a layer of silky smooth milk chocolate ganache, a layer of milk chocolate coated cornflakes and finished with a layer of crushed mini eggs.

It’s what I’d call a ‘health professionals idea of hell’ desert (as let’s be honest, they’d all advise us to stay away from foods like this haha) and I instantly knew I needed to make this cake myself as if I didn’t, i’d get serious fomo and live with deep regret.

Therefore, if you hadn’t guessed what I’m sharing with you today, it’s my version of the viral crunch cake which I know for a fact you guys are going to go mad for.

It’s every bit as good as it sounds and the perfect desert to share with loved ones this Easter!

Ingredients You Need For The Chocolate Fudge Cake:

  • 175g Of Dark Chocolate
  • 150g Of Unsalted Butter
  • 125ml Of Hot Water
  • 3 Medium Eggs
  • 125ml Of Plain Yogurt
  • 50ml Of Vegetable Oil
  • 2tsp Of Vanilla Bean Paste / Extract
  • 150g Of Caster Sugar
  • 150g Of Light Brown Sugar
  • 250g Of Plain Flour
  • 50g Of Cocoa Powder
  • 1 1/2tsp Of Bicarbonate Of Soda

Ingredients You Need For The Milk Chocolate Ganache Layer:

  • 300g Of Milk Chocolate, Chopped Finely
  • 300ml Of Double Cream

Ingredients You Need For The Chocolate Coated Cornflake Layer:

  • 250g Of Cornflakes
  • 500g Of Milk Chocolate

Ingredients You Need For The Topping:

  • 100g Of Mini Eggs, Crushed

How To Make The Chocolate Fudge Cake:

  • Firstly, gather together your equipment and ingredients, grease the base of a deep pyrex dish (or any dish you’ve got to hand that can be put in the oven) with butter and preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large heat-proof bowl, over a saucepan of barely simmering water, mix together the 175g of dark chocolate, 150g of unsalted butter and 125ml of hot water until melted and combined. Once melted, remove from the heat and allow to cool slightly.
  • Next, in a large mixing bowl, using a balloon whisk, whisk together the 3 medium eggs, 125ml of plain yogurt, 50ml of vegetable oil and 2tsp of vanilla bean paste until combined.
  • Add 150g of caster sugar and 150g of light brown sugar and whisk until smooth.
  • Now, whisk in the cooled melted chocolate mixture until smooth.
  • Sift the 250g of plain flour, 50g of cocoa powder and 1 1/2tsp of bicarbonate of soda into the wet ingredients and whisk until everything is thoroughly combined.
  • Pour the batter into the base of your greased dish and using a palette knife, level the cake.
  • Place into the oven for 45-50 minutes, until a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and set the dish to one side till the cake is completely cooled.

How To Make The Chocolate Ganache Layer:

  • Now that the cake has cooled completely, it’s time to make the chocolate ganache.
  • Place the finely chopped 300g of milk chocolate into a heat proof bowl.
  • In a saucepan, add the 300ml of double cream. Over a medium-high heat, bring the cream to just the boil.
  • When boiling, remove from the heat and immediately pour over the chopped chocolate and leave for 2 minutes.
  • After 2 minutes, using a spoon or spatula, carefully mix the chocolate and cream together to create a silky smooth chocolate ganache.
  • Place the chocolate ganache into the fridge for 30-40 minutes to allow the ganache to thicken slightly.
  • Once thickened, pour the chocolate ganache over the top of the chocolate fudge cake and using a palette knife, smooth the ganache over the cake in an even layer.

How To Make The Chocolate Cornflake Layer:

  • In a large bowl, add in the 250g of cornflakes.
  • Next, in a large saucepan, over a low heat, add the 500g of milk chocolate and whilst stirring constantly, heat the chocolate until melted.
  • Once melted, remove from the heat and immediately pour over the cornflakes and using a spoon or spatula, fold the chocolate into the cornflakes until the cornflake’s are completely coated.
  • Spoon the chocolate cornflakes on top of the chocolate ganache in a even layer until the ganache is completely covered.
  • Finally, sprinkle the 100g of crushed mini eggs across the top of the cornflakes and serve.

That’s your Mini Egg Cornflake Crunch Cake prepared, baked and topped with the layers, ready for you to enjoy this Easter.


Notes:

  • For the freshest taste, I would personally recommend eating this cake on the day it’s made. However, it can be stored in an airtight container in the fridge for up to 4 days.
  • I would recommend eating this cake warm for the gooiest texture.
  • I would recommend making the chocolate ganache and chocolate cornflakes as close to serving this cake as possible.
  • If you don’t have a deep pyrex dish, you can make this in whatever cake tin you have. Again, I would recommend the tin to be deep.
  • You want the cornflakes to be drenched in chocolate, hence the large amount of chocolate used.
  • If you don’t have plain yogurt to hand, you can use either buttermilk or sour cream at a 1:1 ratio instead.
