Hello lovelies,
I don’t know about you but to me, it isn’t Christmas without a tub of Celebration Chocolates, right?
I can’t ever remember a Christmas without them on our treat table and after many many years, I’ve definitely come to the conclusion that Celebrations are in fact, my favourite tub of all. Yup, I said it, Celebrations are the best box of chocolates.
Over the last couple of years, I’ve seen so many incredible recipes which have included Celebration Chocolates that I just had to jump on the bandwagon.
Last year I shared with you a ‘Celebrations Cookie Bars’ recipe and this year, I’ve been inspired by the insanely talented Kat (also known as ‘The Baking Explorer’ online), who shared this recipe and it instantly caught my attention. Therefore, today I’m sharing with you, this ‘Celebrations Rocky Road’ recipe.
I saw Kat’s recipe and had to instantly add it to my list of bakes to do this festive season! After-all, who wouldn’t love to demolish a batch of Celebrations Rocky Road? It’s just heavenly.

Category: Sweet Treat / Christmas
Servings: 16-20 Slices
Prep Time: 15 Minutes
Chill Time: Minimum Of 3 Hours
Overall Time: 3+ Hours
Ingredients You Need For The Rocky Road:
- 250g Of Milk Chocolate, Chopped Into Small Pieces
- 250g Of Dark Chocolate, Chopped Into Small Pieces
- 200g Of Unsalted Butter
- 150g Of Golden Syrup
- 150g Of Digestive Biscuits, Broken Into Pieces
- 100g Of Glacé Cherries, Each Chopped In Half
- 100g Of Mini Marshmallows
- 300g Of Celebration Chocolates
Ingredients You Need To Decorate:
- 150g Of Celebration Chocolates
How To Make The Rocky Road:
- Firstly, gather together your equipment and ingredients and line a 8” loose-bottomed, square baking tin with parchment paper.
- Secondly, in a saucepan, over a low heat, melt together the 250g of milk chocolate, 250g of dark chocolate, 200g of unsalted butter and 150g of golden syrup, stirring continuously as it melts.
- Once everything has fully melted and combined together, remove from the heat.
- In a large bowl, add 150g of broken digestive biscuits, 100g of glacé cherry halves, 100g of mini marshmallows and 300g of chopped up celebration chocolates and stir together.
- Pour 2/3rds of the melted chocolate mixture into the bowl with the dry ingredients and stir together until the fillings are fully coated by the chocolate.
- Pour into the lined tin, with a spatula, smooth down until evenly spread across the tin.
- Now, pour the remaining 1/3rd of the melted chocolate across the top to fill in any gaps and smooth out.
- Add the chopped 150g of celebration chocolates on the top of the rocky road to decorate (at this point, you could also add some sprinkles).
- Place into the fridge for a minimum of 3 hours until fully set (personally I tend to leave it in the fridge overnight but this is optional).
- Finally, once set, carefully remove from the tin and using a sharp knife, cut into 16+ slices.
That’s your Celebration Rocky Road prepared, chilled and cut, ready for you to enjoy!
Notes:
- This rocky road should be stored in an airtight container for 1-2 weeks at room temperature or 3 weeks in the fridge.
- If celebration chocolate isn’t your favourite, you could use any chocolate you prefer, it will taste just as yummy.
- You can also remove any of the other ingredients you don’t like or swap them for something you prefer. This rocky road is very versatile.
