If you’ve been around here a while, you’ll know that rocky road is a firm favourite with my family.
It’s something I make quite often and there’s nothing I enjoy more than switching the ingredients up and trialling new ingredients to keep things interesting. Whilst the ‘original’ rocky road will always hold a special place in my heart, today’s rocky road has quickly become a favourite.
This is no normal rocky road, this is a vegan valentines day special and boy, is it good!
Although, I can’t take credit for today’s recipe, this was originally shared by the incredibly talented Holly Jade, also known as ‘The Little Blog Of Vegan’ online. As soon as Holly shared this recipe on her page, I instantly fell in love and knew I had to give it a make myself to share with my loved ones.

As let’s be honest, getting knee deep in a delicious, indulgent, messy rocky road with the person/people you love, is the best type of present.

Ingredients You Need For The Rocky Road:
- 200g Of Dairy-Free Milk Chocolate
- 200g Of Dairy-Free Dark Chocolate
- 2tbsp Of Golden Syrup
- 40g Of Dairy-Free Unsalted Butter
- 200g Of Pink Wafer Biscuits
- 150g Of Mini Vegan Marshmallows
- 50g Of Freeze-Dried Raspberries
Ingredients You Need To Decorate:
- 300g Of Dairy-Free Milk Chocolate
- 15g Of Dairy-Free Unsalted Butter
- 1x Pack Of Jammie Dodgers Mini’s
- 10g Of Freeze-Dried Raspberries
- 20g Of Mini Vegan Marshmallows
How To Make The Rocky Road:
- Firstly, gather together your equipment and ingredients and line a 9×9” loose-bottomed, square tin with parchment paper.
- Secondly, in a large saucepan (or in a Bain-Marie) over a low heat, place both the 200g of milk and dark chocolate, 2tbsp of golden syrup and 40g of butter and stir until everything has completely melted together.
- Once melted, remove the saucepan from the heat and leave to one side to cool for 10 minutes.
- Next, break up the 200g of pink wafer biscuits into small pieces and add into a large mixing bowl alongside the 150g of mini marshmallows and 50g of freeze-dried raspberries.
- Pour the chocolate mixture over the dry ingredients and using a spatula or wooden spoon, stir together to combine and everything is fully coated.
- Spoon the rocky road mixture into the prepared baking tin, making sure to press the mixture down to compact it and get it right into the corners.
- Place the rocky road into the fridge for an hour until firm.
How To Decorate The Rocky Road:
- In a Bain-Marie, over a medium heat, place the 300g of milk chocolate and 15g of butter and stir until completely melted.
- When melted, remove from the heat and allow to cool for 10 minutes.
- Once firm, remove the rocky road from the fridge and pour the 300g of melted milk chocolate over the top of the rocky road. Making sure you cover the entire top of the rocky road.
- Evenly sprinkle over the 10g of freeze-dried raspberries and 20g of marshmallows.
- Then add the mini jammie dodgers on top and lightly press everything down into the chocolate.
- Now, place the rocky road back into the fridge and allow to set for 4+ hours or overnight until completely firm.
- Finally, using a sharp knife, carefully cut the rocky road into small pieces and serve.
That’s your Vegan Valentines Rocky Road prepared, chilled, decorated and chilled again, ready for you to enjoy!
Notes:
- Store the rocky road pieces in an airtight container, in the fridge for up to 1 month.
- You can freeze the rocky road pieces in an airtight container for up to 3 months. Allow to fully defrost before eating.
