S’mores Cookie Bars Recipe!

I know a lot of people will disagree and see it more as a summer camping sweet treat but picture this:

It’s a cold autumnal night, you and your loved ones are sitting around a warm bonfire, toasty under the blankets, gossiping and catching up on life. What’s one sweet treat you need? A s’more. I’ll go one step further in saying you need a s’mores cookie bar. All warm and gooey, the best kind of treat to eat during autumn.

Ingredients You Need For The S’mores Cookie Bars:

  • 113g Of Unsalted Butter
  • 150g Of Light Brown Sugar
  • 1 Large Egg
  • 2tsp Of Vanilla Bean Paste / Extract
  • 125g Of Plain Flour
  • 120g Of Digestive Biscuit Crumbs
  • 1/2tsp Of Baking Powder
  • 200g Of Milk Chocolate Chips
  • 1x Jar Of Marshmallow Fluff

How To Make The S’mores Cookie Bars:

  • Firstly, gather together your equipment and ingredients, line a 8 or 9” loose bottomed, square baking tin with parchment paper and preheat the oven to 200C / 180C Fan / Gas Mark 4.
  • Secondly, using a stand mixer or an electric whisk, cream together the 113g of unsalted butter with 150g of light brown sugar until light and fluffy.
  • Next, beat in the 1 large egg and 2tsp of vanilla extract until combined.
  • In a separate bowl, whisk together the 125g of plain flour, 120g of digestive biscuit crumbs and 1/2tsp of baking powder.
  • Add the dry ingredients into the wet and beat again until combined.
  • Press 2/3 of the cookie dough mixture into the bottom of the prepared baking tin (this dough will be very sticky and it’ll only be a very thin layer).
  • Using a spoon, spread the marshmallow fluff evenly across the top of the cookie dough.
  • Sprinkle an even layer of 150g of milk chocolate chips across the top of the marshmallow fluff.
  • Mould the remaining cookie dough into flat pieces in an even layer across the top of the chocolate chips (there won’t be enough to do a single layer of cookie dough across the top therefore, some of the marshmallow fluff and chocolate chips will be exposed).
  • Place the cookie bar into the oven and bake for 25-30 minutes, until the top is lightly golden brown.
  • Once baked, remove from the oven and allow to cool fully in the baking tin before carefully removing from the tin and placing on a wire rack.
  • Finally, once fully cooled, cut the bar into squares and serve.

That’s your S’mores Cookie Bar prepared, baked and cooled, ready for you to enjoy!


Notes:

  • Store these cookie bars in an airtight container at room temperature for up to 1 week.
  • These bars can be frozen for up to 3 months. Once the bars have fully cooled and are cut into squares, layer between parchment paper and place into a freezer safe container. When ready to use, thaw overnight in the fridge and then bring to room temperature before serving.
  • I would not recommend using ‘normal’ marshmallows for this recipe as the marshmallows will melt into the cookie dough, disappear and create craters.

Yup, they are that easy to make and bake! You honestly can’t go wrong with these bars, they are sensational (if I do say so myself *wink wink*).

These don’t have to just be eaten around a bonfire, that was just me setting the scene. These can be eaten in the comfort of your own home, at a loved one’s gathering, at special occasions – whenever it takes your fancy. This cookie bar is guaranteed to be a hit!
