You’ve probably heard me say this 100+ times before but my family absolutely LOVE a rocky road. It’s a firm favourite and I can always guarantee that the entire thing will be demolished within the first 48 hours after making it.
When scrolling through my Pinterest recently, I came across a picture of an eton mess, yes you read right, an eton mess rocky road and you can only imagine my excitement.
Me personally, I’ve only ever dabbled in the ‘traditional’ rocky roads so to see a totally new version that looked absolutely delicious, you just know I had to try it for myself.
I mean, everyone loves eton mess, right? And this rocky road I’m sharing with you today contains all the goodness of an eton mess, from the meringue to the strawberries, just in a rocky road form. Take my word for it when I say, it was absolutely blooming sensational.
And, as summer is coming to an end, i know it can be a very depressing time for some, therefore it felt like the perfect time to make this eton mess rocky road to keep those summer days alive for that little bit longer.

Ingredients You Need:
- 500g Of White Chocolate
- 40g Of Freeze-Dried Strawberries
- 100g Of Mini Marshmallows
- 50g Of Shortbread Fingers, Broken Into Small Pieces
- 6 Meringue Nests
How To Make The Rocky Road:
- Firstly, gather together your equipment and ingredients and line a rectangle tin with parchment paper.
- Secondly, tip 30g of freeze-dried strawberries, 100g of mini marshmallows, 50g of broken shortbread fingers and crush 5 of the meringue nests into a large mixing bowl and using a spoon, mix together until combined.
- Next, break the 500g of white chocolate into a microwavable bowl, place into the microwave and in 10 second blasts, blast the chocolate until fully melted.
- Pour the melted chocolate into the large mixing bowl with all the dry ingredients and stir together until everything is fully coated.
- Tip the rocky road mixture into the pre-lined baking tin and spread it out to fill.
- Crush the last meringue nest into small pieces and sprinkle them over the top with the remaining 10g of freeze-dried strawberries.
- Press down gently with a spatula until compact.
- Place into the fridge to set for anywhere between 2-4 hours, overnight if wanted, until firm.
- Finally, remove from the fridge after chilling and carefully remove from the tin. Using a Sharpe knife, cut the rocky road into small pieces.
That’s your Eton Mess Rocky Road prepared and chilled, ready for you to enjoy!
Notes:
- You can use whatever ingredients your prefer to make your rocky road, the only thing I would recommend not using is fresh strawberries.

- Store the rocky road in an airtight container for 1-2 weeks at room temperature or 3 weeks in the fridge.
