Hello lovelies,
What’s one thing you remember about 2020 when the dreaded C hit? Aside from the obvious, for me, it’s the simple banana loaf going viral. People who have never stepped foot in the kitchen to bake before found themselves involved in the trend.
Me however… not so much! Yes, I was in the kitchen baking up a storm to share with you guys BUT I never jumped on the trend of a banana loaf.
Now, 4 years later, I’m actually jumping on the band wagon and I’ve found myself falling in love with making and baking banana loafs! So, if you hasn’t guessed already, that is what I’m sharing with you today.
That being said, this isn’t any normal banana loaf, this is a banana loaf packed to the brim with dark chocolate chips and the secret ingredient… biscoff spread!
Biscoff isn’t something I’ve experimented with much over the years but I’ve got to say, in this bake, the addition of biscoff is sensational.
I can’t take credit for today’s recipe though guys, this is a Jane’s Patisserie original and the moment I saw the recipe pop up on my page, I immediately brought the ingredients to make a loaf for my family and let’s just say, it certainly didn’t disappoint.

Ingredients You Need For The Biscoff Banana Loaf:
- 5 Large Ripe Bananas
- 125g Of Unsalted Butter
- 150g Of Light Brown Sugar
- 3 Medium Eggs
- 2tsp Of Vanilla Bean Paste / Extract
- 75g Of Sour Cream
- 250g Of Self-Raising Flour
- 1tsp Of Baking Powder
- 300g Of Dark Chocolate Chips
- 1 Jar Of Biscoff Spread
How To Make The Biscoff Banana Loaf:
- Firstly, gather together your equipment and ingredients, line a 2lb loaf tin with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 4.
- Secondly, in a small bowl, using a fork, mash up 4 large bananas until they’re soft and mushy.
- In a large bowl, using a stand mixer or electric whisk, beat together the 125g of unsalted butter and 150g of light brown sugar until light and fluffy.
- Next, beat in the 3 medium eggs, mashed banana, 75g of sour cream and 2tsp of vanilla extract until just combined.
- Now, add the 250g of self-raising flour and 1tsp of baking powder and beat again until just combined.
- Toss 300g of dark chocolate chips in a tbsp of flour, then fold through the banana loaf batter.
- Pour two thirds of the banana loaf batter into the prepared baking tin and then top with a layer of biscoff spread.
- Add the remaining banana loaf batter on top of the biscoff spread and then using a knife, swirl 3tbsp of biscoff spread on top of the loaf.
- As decoration, add one split banana on top.
- Place into the oven and bake for 60-70 minutes, until a skewer inserted into the centre of the loaf comes out clean.
- Finally, once baked, remove from the oven and allow to cool right down in the loaf tin before carefully removing. Cut into 8-10 slices and enjoy!
That’s your Biscoff Banana Loaf prepared, baked and cooled, ready for you to enjoy!
Notes:
- This recipe will last 4-5 days in an airtight container at room temperature.
- If half way through baking you find the loaf is browning too much / too quickly, place a piece of tin foil over the loaf cake and continue baking.
- If you don’t want to use sour cream, you can use natural yoghurt or buttermilk as an alternative.

This loaf was beyond my expectations. I knew it would be good as let’s be honest, Jane is the queen of baking after all but I never expected it to be this good.
I think I’ve fallen well and truly in love with banana loafs and I’m very eager to experiment more. So be prepared for a banana loaf take over haha.
