Honey Vanilla Cupcake Recipe!

If there’s a bake which always holds a special place in my heart, it’s cupcakes.

I love the whole process of making cupcakes, from the brain storming, to the buying of ingredients, to the creative process and the final outcome, every single step is enjoyable.

So, if you hadn’t of guessed already, I’m back today with another yummy cupcake recipe for you to make, bake and demolish this summer!

Whilst the combination of flavours to add into a batch of cupcakes is endless, today’s cupcakes I wanted to be fresh, light and sweet – so that’s exactly what I did and BOY am I obsessed with the outcome.

Rather than it being a multi flavoured cupcake, I decided the ingredient I’m really allowing to take centre stage today is honey.

Honey is one of those ingredients which just adds the perfect amount of sweetness to any bake. With that being said, I don’t use honey enough in my bakes which is why I wanted the key ingredient of these cupcakes today to be honey and really allow it to have its moment shine.

With the honey adding the perfect amount of sweetness to these cupcakes, I also wanted to add a fresh element which would complement and balance the sweetness, so I chose thickened double cream and fresh fruit. And honestly… what a combo!

Ingredients You Need To Make The Honey Vanilla Cupcakes:

  • 170g Of Unsalted Butter
  • 170g Of Caster Sugar
  • 6tbsp Of Honey
  • 1tsp Of Vanilla Bean Paste / Extract (Optional)
  • 3 Large Eggs
  • 170g Of Self-Raising Flour
  • 1/2tsp Of Baking Powder

Ingredients You Need To Decorate:

  • 300ml Of Double Cream
  • 1tbsp Of Vanilla Bean Paste / Extract
  • 3tbsp Of Icing Sugar
  • 1x Punnet Of Fresh Strawberries, Cut In Half
  • 1x Punnet Of Fresh Blueberries

How To Make The Honey Vanilla Cupcakes:

  • Firstly, gather together your equipment and ingredients, line a 12 hole cupcake tin with cupcake cases and preheat the oven 180C / 160C Fan / Gas Mark 4.
  • Secondly, in a large bowl, using an electric whisk, beat together the 170g of unsalted butter with 170g of caster sugar until light and fluffy.
  • Next, one at a time, beating well between each addition, beat in the 3 large eggs, 6tbsp of honey and 1tsp of vanilla bean paste / extract.
  • Now, mix in 170g of self-raising flour and 1tsp of baking powder until fully combined.
  • Divide the cake mixture between the 12 cupcake cases.
  • Place into the oven for 15 minutes, until lightly golden and a skewer inserted into the centre comes out clean.
  • Once baked, remove from the oven and leave to cool in the cupcake tin for 5 minutes before transferring onto a wire rack to cool completely.

How To Decorate The Cupcakes:

  • Now that the cupcakes have fully cooled, it’s time to decorate.
  • In a large bowl, using an electric mixer, whip the 300ml of double cream with 3tbsp of icing sugar and 1tbsp of vanilla bean paste / extract until thick.
  • Transfer the thickened double cream mixture into a piping bag that has a round piping nozzle attached, then pipe large blobs of cream onto the top of each cake.
  • Finally, press the fruit onto the top of the cream.

That’s your Honey Vanilla Cupcakes prepared, baked and decorated, ready for you to enjoy!


Notes:

  • These cupcakes should keep in the fridge for 2-3 days. It’ll need to be kept chilled due to the double cream and fruit.

I just love how ridiculously quick and easy today’s cupcakes are and how unbelievably delicious the final outcome is!

Today’s recipe just screams summer to me. As I mentioned, it’s super light on the stomach and has the perfect amount of freshness and sweetness which both complement one another beautifully.

I don’t think you could want more than that from a summer cupcake recipe.
