Peanut Butter Cookies Recipe!

Hello lovelies,

Something I’ve learnt this year about my baking is that I haven’t experimented much with some of the most well-loved ingredients and one of them being, peanut butter!

For someone who has always loved peanut butter, I very rarely use it in my bakes so I wanted to do a bake where peanut butter is the key ingredient. Where peanut butter takes centre stage and what better way of doing that than in a cookie?

A cookie is the perfect bake to allow peanut butter to take centre stage so I immediately got down to business and got creating a batch of peanut delights. And let’s just say, this was a great decision on my part. Wowee!

Not only did I use peanut butter spread within the cookies, but I also added in some Reese’s peanut butter chips and DAMN, what a combination. If you couldn’t tell already, I’m quite frankly obsessed and I know for a fact, if you’re a peanut butter lover yourself, you will be too!

It isn’t an overbearing flavour, it’s just the right amount of peanut butteriness.

Servings: 16-18 Medium Sized Cookies

Prep Time: 15 Minutes

Chill Time: 1 Hour

Bake Time: 12-15 Minutes

Overall Time: 1.5 Hours


Ingredients You Need For The Cookies:

  • 100g Of Unsalted Butter
  • 100g Of Smooth Peanut Butter
  • 100g Of Light Brown Sugar
  • 75g Of Granulated Sugar
  • 1 Large Egg
  • 2tsp Of Vanilla Extract
  • 275g Of Plain Flour
  • 1tbsp Of Cornflour
  • 1.5tsp Of Baking Powder
  • 1/2tsp Of Bicarbonate Of Soda
  • 200g Of White Chocolate Chips
  • 200g Of Reese’s Peanut Butter Chips

How To Make The Cookies:

  • Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper.
  • Secondly, in a large bowl, using an electric whisk, beat together the 100g of unsalted butter with the 100g of peanut butter, 100g of light brown sugar and 75g of granulated sugar until light and fluffy.
  • Next, beat in the 1 large egg and the 2tsp of vanilla extract until combined.
  • Now, fold through the 200g of white chocolate and 200g of peanut butter chips
  • Add in the 275g of plain flour, 1tbsp of cornflour, 1.5tsp of baking powder and 0.5tsp of bicarbonate of soda and beat again until a cookie dough forms (TIP: some peanut butters can make the cookie dough dryer than usual, so if this has happened to yours, I’d recommend adding 1-2tsp of milk to make the dough more ‘moist’)
  • Wrap the cookie dough in clingfilm and place into the fridge to chill for 1 hour.
  • As the hour is coming to an end, preheat the oven to 200C / 180C Fan / Gas Mark 5.
  • After 1 hour, remove the dough from the fridge and using a 4’ cookie scoop, scoop your cookie dough and between the palm of your hands, roll the cookie dough into 16-18 balls.
  • Place 6 cookie dough balls on each of the prepared baking trays and place into the oven to bake for 12-15 minutes.
  • Finally, once baked, remove from the oven and leave on the baking trays to cool for 5-10 minutes before transferring onto a wire rack to cool completely.

That’s your Peanut Butter Cookies prepared, chilled and baked, ready for you to enjoy!

If you’re a peanut butter lover, these are an absolute MUST-try!

As I mentioned above, these are just the right level of peanut buttery, not to overpowering that it ruins the cookie but not to light that it leaves you wishing you’d added more. Just perfect (if I do say so myself *wink wink*).
