Hello lovelies,
It’s the 15th of October and that means one thing and one thing only… it’s SPOOKY SEASON baby!
If you know me and have been around here for a while, you’ll know my love for an occasion and Halloween is no exception to that. Therefore, you best believe I’ve spent a fair amount of time in my kitchen, brewing you guys up a storm for this upcoming month and BOY, am I excited to share these bakes with you all.
Today we’re starting the Halloween content off strong with these unbelievably gooey triple chocolate brownies with buttercream spiderwebs.
Yup. As easy as that! I know I sometimes like to share bakes which push myself and a lot of you guys out our comfort zones but this year, I’ve decided to strip right back and stick to easy yet very effective bakes that I know anyone of any skill set can easily achieve and enjoy. These brownies being one of them!
Although, I can’t take credit for todays brownies. These brownies are all down to the incredible Jane’s Patisserie! This is her ‘Triple Chocolate Brownies’ which I can hand on heart say, are the BEST brownies I’ve ever made (and I’ve made my fair share over the years). They are everything a brownie should be: soft, gooey, ultra chocolatey and melt in the mouth delicious.

These brownies paired with my silky smooth vanilla buttercream… unbelievable! I think these will be the perfect bake to do with / for the little ones this Halloween. They look so damn good, if I do say so myself *wink wink*.

Ingredients You Need For The Brownies:
- 200g Of 70% Cocoa Dark Chocolate
- 200g Of Unsalted Butter
- 3 Large Eggs
- 275g Of Caster Sugar
- 100g Of Plain Flour
- 50g Of Cocoa Powder
- 100g Of Milk Chocolate Chips
- 100g Of Dark Chocolate Chips
- 100g Of White Chocolate Chips
Ingredients You Need For The Spiderweb Decoration:
- 50g Of Unsalted Butter
- 100g Of Icing Sugar
- 2tsp Of Vanilla Bean Paste / Extract
How To Make The Brownies:
- Firstly, gather together your equipment and ingredients, line 2x 8inch brownie tins with parchment paper and preheat the oven to 180C / 160C Fan / Gas Mark 5.
- Secondly, in a microwavable bowl, add both the 200g of dark chocolate and 200g of unsalted butter. Place the bowl into the microwave and in 20 second blasts, blast the butter/chocolate until fully melted.
- When both the ingredients have melted, remove from the microwave and place to one side to cool to room temperature.
- Now, in a large bowl, using an electric whisk, whisk together the 3 large eggs with the 275g of caster sugar for a few minutes, until the colour has turned pale, is mousse like and the volume has doubled in size (TIP: you will know it’s done when you lift the whisk up out from the mixture and it should leave a trail for a couple of seconds, before disappearing).
- Once whisked, pour the melted chocolate/butter mixture over the eggs and very carefully fold together (TIP: being careful and patient is crucial at this stage because you don’t want to knock the air out of the mixture).
- When combined, sift in the 100g of plain flour and 50g of cocoa powder and carefully fold into the mixture.
- Carefully fold in the 300g of chocolate chips.
- Divide the brownie mixture between the two brownie tins (TIP: making sure to not over fill the tins otherwise the brownie will cook unevenly).
- Place the brownie tins into the oven and cook for 25-30 minutes, until theres a slight wobble in the centre of the tin and a skewer place into the brownies comes out mostly clean.
- Once baked, remove the brownies from the oven and allow to cool to room temperature in the tin before placing into the fridge to chill for 1-2 hours.
How To Decorate The Brownies:
- When the brownies have chilled, remove the brownies from the fridge, carefully remove from the brownie tins and cut into 18 equal squares.
- Now, in a large bowl, using an electric whisk, beat the 50g of unsalted butter until pale in colour and loose in texture.
- In 2 batches, beat in the 100g of icing sugar and 2tsp of vanilla extract until a buttercream has formed.
- Place the buttercream into a piping bag with a Wilton N4 small round piping nozzle.
- Finally, pipe on the buttercream spiderwebs (TIP: I went on Pinterest and typed ‘spider webs’ and used those photos as my guide).
That’s your Spiderweb Brownies prepared, baked and decorated, ready for you to enjoy this Halloween.
