Brown Butter, Banana & White Chocolate Cookies Recipe!

Do you have some ripe bananas that need using but your struggling for an idea and don’t fancy making another loaf of banana bread? (I think everyone is sick of them after lockdown haha) Then, your gal has got you covered.

Today I’m sharing with you the most incredible cookie recipe which includes those ripe bananas. This is a recipe myself and you guys will defiantly keep coming back too due to its unique yet utterly delicious taste.

You guys know me well enough by now to know that I love a recipe that’s different. I love a recipe which has all different types of ingredients that you wouldn’t necessarily pair together yourself but actually, work beautifully with one another – today is one of those recipe.

As you’ll see from the title, these cookies have the delicious taste of nutty brown butter, banana and sweetness of white chocolate. Three very strong tastes but my word, do they work! It’s one of those cookies that you bite into and it’s a magical experience for the taste buds!

All that being said, I can’t take credit for these cookies today. To be completely honest with you all, I personally never would have thought about pairing these ingredients together but when I came across this recipe whilst scrolling through Pinterest, you best believe my eyes lit up and my shopping cart was filled.

Ingredients You Need To Make The Cookies:

  • 170g Of Unsalted Butter
  • 100g Of Granulated Sugar
  • 110g Of Light Brown Sugar
  • 1 Egg Yolk
  • 1 Large Banana, Mashed
  • 250g Of Plain Flour
  • 1tsp Of Baking Powder
  • 200g Of White Chocolate Chips

How To Make The Cookies:

  • Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper.
  • Secondly, in a small saucepan over a medium heat, add 170g of unsalted butter.
  • Allow the butter to melt completely whilst stirring occasionally until the butter begins to foam, this will roughly take between 5-10 minutes depending on the heat of your hob.
  • Once the butter has turned a golden brown colour and has a nutty aroma, remove from the heat.
  • Transfer the brown butter into a large mixing bowl and allow to cool for 30 minutes before using.
  • Once the brown butter has cooled, add the 100g of granulated sugar and 110g of light brown sugar to the large mixing bowl with the butter and using an electric whisk, beat together until light and fluffy.
  • Next, add the one egg yolk and 2tsp of vanilla extract to the large mixing bowl and beat again until combined.
  • Add the mashed banana and mix in well.
  • Now, in a separate large bowl, combine the 250g of plain flour, 1tsp of baking powder and 200g of white chocolate chips.
  • Carefully fold the dry ingredients / chocolate chips into the wet ingredients until well combined.
  • Using a 4” cookie scoop (or a ice cream scoop / tablespoon, depending on what you have to hand), scoop the cookie dough into small balls and place onto the pre-lined baking trays.
  • Once all the dough has been made into small balls, cover the tray tightly with some clingfilm and place the balls into the fridge to chill for one hour (if your in a rush, chill for a minimum of 30 minutes)
  • When the hour is nearly up, preheat the oven to 180C / 160C Fan / Gas Mark 4.
  • After an hour, remove the cookie dough balls from the fridge and place the cookie dough balls at least 2inches apart on the baking tray (this will allow the cookies to spread whilst cooking).
  • Place the cookie dough into the oven and bake for 10-12 minutes, until they are golden brown but the centres are still soft.
  • Finally, remove from the oven and allow to cool on the baking trays for 5-10 minutes before transferring onto a wire rack to cool completely.

That’s your Brown Butter, Banana & White Chocolate Cookies prepared, baked and cooled, ready for you to enjoy!
