Hello lovelies,
I’ve actually seen this recipe circling the internet for a while now and it’s name caught my attention straight away.
Now you may be looking at this thinking it doesn’t look all that pleasant but don’t judge a book by it’s cover people, this is quite honestly a plate of pure perfection! You’ll just have to take my word for it.
Like I said, I’ve seen this recipe circling the internet but the main account which really sold it to me was Pinch Of Nom. Now, we all know my love for PON and their creations, I’ve shared a fair few of their recipes here on my blog and honestly, I’m constantly inspired by them and their low calorie meals. They have a way of making EVERYTHING they make look and sound so damn good.
Now, my version I’m sharing with you today is totally inspired by PON but isn’t using all the same ingredients, you know me, I like to chop and change ingredients to suit my families preferences. But, if you’d like to check out the original recipe to see the changes I’ve made, then here’s the link: https://pinchofnom.com/recipes/cheesy-fajita-orzotto/.
I think this might be my most favourite PON inspired recipe I’ve ever made. I know! That’s a big claim coming from someone who practically falls in love with every single recipe they make but this just takes the flag for me. It packs a real punch in flavour and left my family wanting more… that’s how you know a recipes good, right?
So, trust me when I say, don’t sleep on this my friends. If you are even the slightest bit interested in what todays recipe has to offer, then get making it asap. You won’t regret it, I can promise you that!

How To Make Orzotto:

- Next, add and mix in the 3tsp of garlic granules and 1/2 a packet of fajita seasoning.
- Add in the 2tsp of tomato puree and allow to cook for a minute.

- Once its boiling, add 200g of orzo into the pan and stir well (TIP: ensure that the orzo is covered by the stock cube water.
- Reduce the heat to a simmer, cover and allow to cook for around 15-20 minutes, making sure you stir every few minutes so the orzo doesn’t catch to the bottom of the pan.
- After the 20 minutes, the orzo should be cooked and the liquid absorbed, if not, allow to cook for a while longer with the lid off. the consistency should be like a risotto.
- When the liquid has been absorbed, stir in 120g of cheddar cheese and 50g of mozzarella until its melted.
- Finally, once the cheese has melted, dollop into a bowl and serve.
