S’mores Cookie Recipe!

Another day, another cookie recipe and if your a s’mores lover, then you NEED to try these cookies asap!

Over the last a couple of years ago, I have posted two or three s’mores recipes and each one I am absolutely obsessed with. However, these cookies I’m sharing with you today… have instantly become my favourite s’mores recipe to date.

With that being said, I can’t take full credit for today’s recipe. This recipe is inspired by the incredibly talented Sophia, also known as ‘Sophia’s Goodies’ online who posted a video of her s’mores cookies and it instantly caught my attention.

S’mores have quickly become a massive trend in the baking world which I love as 1) i’m always one who loves to jump on the bandwagon as you know and 2) I’m always here for a good s’mores recipe.

Which is why when I saw Sophia’s video she had posted on her instagram, I just knew I had to recreate them.

A crunchy digestive biscuit base, gooey marshmallow centre all encased in a perfectly made, milk chocolate chip crammed cookie dough which is then baked to absolute perfection and ready to serve warm or cold. If that doesn’t sound heavenly to you, I don’t know what will…

Servings: 12 Large Cookies

Ingredients You Need For The Cookies:

  • 12 Digestive Biscuits
  • 12 Mega Marshmallows
  • 125g Of Unsalted Butter
  • 100g Of Light Brown Sugar
  • 75g Of White Granulated Sugar
  • 1 Large Egg
  • 2tsp Of Vanilla Bean Paste / Extract
  • 300g Of Plain Flour
  • 1.5tsp Of Baking Powder
  • 1/2tsp Of Bicarbonate Of Soda
  • 200g Of Milk Chocolate Chips

How To Make The Cookies:

  • Firstly, gather together your equipment and ingredients and line two baking trays with parchment paper,
  • Secondly, place 6 digestive biscuits onto each baking tray.
  • Top each digestive biscuit with 1 mega marshmallow, then set trays to one side.
  • Next, in a large bowl, beat together the 125g of unsalted butter with 100g of light brown sugar and 75g of white granulated sugar until creamy.
  • Add 1 large egg and beat again.
  • Add the 300g of plain flour, 1.5tsp of baking powder and 1/2tsp of bicarbonate of soda and beat again until a cookie dough has formed.
  • Now, add the 200g of milk chocolate chips and beat again until evenly distributed throughout the cookie dough.
  • Weigh the cookie dough out into 12 equal sized cookie dough balls (mine roughly weighed around 90g each).
  • Once rolled into balls, press the cookie dough into the palm of your hand and encase the cookie dough around the edges of the digestive biscuit and entire mega marshmallow (making sure the marshmallow and edges of the digestive biscuit are enclosed fully, so it doesn’t leak out whilst cooking).
  • Chill the cookies in the refrigerator for 1 hour or the freezer for 30 minutes.
  • Whilst the cookies are chilling, preheat the oven to 200C / 180C Fan / Gas Mark 5.
  • Remove the cookies from the fridge after 1 hour then, place both trays into the oven and bake the cookies for 18-20 minutes.
  • Finally, once baked, remove from the oven and allow the cookies to cool slightly on the tray before transferring onto a wire rack to cool completely. They are then ready to be served.

That’s your S’mores Cookies prepared, chilled, baked and cooled, ready for you to enjoy!


Notes:

  • These cookies will last for 3-4 days stored in an airtight container at room temperature.
  • You can freeze the baked or raw cookies for up to 3 months.
  • If you want a gooey centre, I would recommend heating the baked cookies for 20-30 seconds in the oven or microwave.
  • It’s pivotal that the marshmallow is enclosed properly within the cookie dough so that it doesn’t leak out whilst baking.
  • I brought my mega marshmallows from Asda, but they can also be brought from Amazon.

The best s’mores cookies I’ve made to date (and that’s a bold statement from me as I love the previous ones I’ve shared)! I’m obsessed and I can guarantee you will be too.
