Low Calorie Sloppy Joes Recipe!

Hello lovelies,

Today’s post is another bake inspired by the book Pinch Of Nom! Myself and my mum are really into getting recipes from this book and bringing them to life. We don’t follow the instructions exact as we put our own touch on them (like every recipe I share).

I’d heard of Sloppy Joes before but never really knew what they were until now. They are an American creation that essentially are just a stuffed pepper which is something I’ve been wanting to make for a while now.

You can literally stuff your peppers with anything you like but today, I went for mince and cheese (it’s almost like a bolognese with melted cheese on top) which went down a treat with my family so I thought I’d share the recipe with you today!

Ingredients You’ll Need:

  • Packet Of 5% – Fat Minced Beef
  • 1 Onion, Finely Diced
  • 1 Red Pepper, Halved Length-Ways
  • 1 Yellow Pepper, Halved Length-Ways
  • 40g Of Reduced-Fat Cheddar, Grated
  • 3tsp Of Garlic Granules
  • 1tsp Of Mustard Powder
  • 3tbsp Of Worcestershire Sauce
  • 3tbsp Of Tomato Purée

How To Make Sloppy Joes:

  • Firstly, gather together your equipment and ingredients and preheat the oven to 200C / 180C Fan / Gas Mark 6.
  • Secondly, spray low calorie cooking spray onto a large frying pan and place over a medium heat.
  • Add the onion and garlic granules to the pan and cook for around 4-5 minutes, until the onion begins to soften.
  • Once softened, add in the packet of mince, turn the heat up to high and cook for 5 minutes stirring continuously and breaking up the mince with your wooden spoon – do this until the mince has browned.
  • When the mince has browned, add the 1tsp of mustard powder, 3tbsp of Worcestershire sauce and 3tbsp of tomato purée to the pan and stir until the three ingredients have been mixed in.
  • Now that everything has been cooked, take the pan off the heat.
  • Divide the beef mixture between the 4 pepper halves making sure you fill them right up (you may have some left over).
  • Scatter the grated cheese over the top of the pepper and place the filled peppers onto a baking tray.
  • Place the baking tray into the oven for around 10 minutes, until the cheese is golden and the peppers are just cooked (TIP: you want them to have a little crunch still).

That’s your Sloppy Joe’s prepared, cooked and ready to be demolished!

      I’m the same, I’d heard of them but never tried before. I had high expectations as I do love American food and boy did they live up to their expectation! They are so easy to make, take little time and are super yummy Xo

    The only sloppy joes I have ever had are sandwiches overflowing with ground beef, onions, and seasonings on a burger bun. Very messy and often not very tasty! Loving your version so much more; it is tough to beat the appeal of a stuffed pepper.
